    I'm a cottage baker in Pahrump NV. Been doing it nearly 2 years. Opening up my own shop. This organization, execution and precision brought tears to my eyes. Props! You all do a magnificent job. If anyone has ANY advice for me, including finding good buys on machinery (i roll by hand) please talk to me. Thanks for a fantastic video!! Oh and btw what was the topping after the everything bagels?

    I love good bagels! When I was in visiting in New York, there was an authentic bagel store on the corner that seemed as though it never closed. The bagels were always fresh and delicious!

    Hello again, opened my shop and doing great. Question please, do u make your dough then store it over night in the bus tubs? Do u then form them next day, and then kettle and bake (without refrigerating again)? I'm hugely limited on space, this process would be great for me, if that's what u do and it works. Do u mind answering that? Tia

      Glad to hear it! We’re not in the restaurant business, just video production. But I think the dough is in the fridge overnight. Not sure about the shaped bagels. Best of luck with your shop! 🥯

      Yes, the formed bagels are refrigerated overnight. So the bagels made every morning are boiled and baked the next morning.

      @@eatyourselfsilly I don't mean that if I add ice to the dough to cool the dough, the bread comes out prettier, because when mixing the dough, it warms up anyway, greetings

    If you do this every day,the same measurements, flour, sugar,salt and or other ingredients the girls waste more time adding it than actually preparing the dough. Put most of the ingredients in single bags to just open the bag and add it ready for the almost last step of the rolling machine

      I thought the same thing... Much better if you use plastic containers instead of plastic bags so you can reuse them and avoid the waste...

    I like the video. I would rethink your process for adding the flour. The bags of flour is set on the floor, then put in the side of the vat and opened. The contamination from the floor is now introduced into the product. Unsanitary.

      Thank you. I was waiting for a comment on this food safety point. And also I’d point out the tubs on the floor while putting dough from mixer and then onto table, sliding across work surface and dumping dough right on the spot it was just on. Provided they are going to be cooked but these are bad food safety practices and would be dinged by the inspector if they walked in. Always practice safe food handling practices all the way through the process. 👍Other than that this is a great video.

      That way the Bagels are crunchy on the outside and chewy on the inside! Just like a soft pretzel. I love my bagel with cream cheese in the morning, with black coffee.

    I'm trying to understand the claim of this video and the comments. How is this the best bagel shop in a city like Chicago when all their ingredients are commercial quality (or lack there of)? The method/process is entirely industrial also. I'm sure it's good but "best?" No chance.

      Hi. We’re not affiliated with this restaurant, but health and safety regulations only require gloves when working directly with customer. These workers wash their hands often and are very careful to keep the food areas clean.

      All the containers are wiped down when they are taken out of the fridge the next day. That part isn’t shown in the video though.

    Observation:
    This place is akin to Katz Deli in N.Y. . . . the kosher family is long gone and workers today look like prison-release people. We are supposed to accept that, not see or judge that? I'll opt for 6 bagels/ $3 at Kroger.

    А по моему это просто плохо организованно рабочее место и выглядит как хаос, неприятность. Когда смотришь корейские или китайские ролики, там все гармонично и отработано до мелочей. Может просто оператор не совсем удачный, мне немного не понравилось. Особенно замес теста, продукты на полу, куча коробок и т. Д.

    These bagels are not good. Real bagels are thin big hole in the middle. Have to be spayed with lye.

      Bunlar Türkiye den kopya çekmişler.Türkiye de simit veya İzmir de gevrek denir.El de yapılır.Pekmezli su ile haşlanırsa daha güzel olur.Ancak,İspanya dan İzmir'e gelen Yahudiler POYOZ yapmışlar.Haim ustanınki meşhurdu.Haşlanmış yumurtaya, kimyon,karabiber tuz karışımı serpilir.Poyoz ve çay ile sabah kahvaltıları enfes olur.Bir gün Türkiye ye gelirseniz sokakta satıldığını da görürsünüz.

      @@eatyourselfsilly Denemenizi tavsiye ederim.Türk mutfağı pek bilinmez.Ama çok lezzetli yemekleri vardır.Yunanistan'ın ilk kralı Otto aşçılarını bir ay süre ile İstanbul'a yollamış.Aşçılar 1.5 sene de dönmüşler.Yemekler o kadar çok ve güzeldi ki zaman aldı demişler.Size başarılar dilerim.Türkiye/İzmir den selamlar.Sütlaç,Kazandibi vs süt ile yapılan tatlılara da bakmanızı tavsiye ederim.Avrupa DÖNER 'e alıştı.Merkel ve Schröder ,"hergün yiyoruz " diyorlar.

    Watching the gal, putting the flour bag, on the edge of the large bowl, after just lifting the bag off the floor! VERY UNSANITARY! Part of the bottom leaning into the bowl, whilst shaking the bag of flour, and, slicing the paper bag, with knife, and possibly, some of the bag pieces, falling into large bowl!! Extra Fiber? I won’t eat these Bagels! Couple things wrong with this display!! No Health Department check ups??
