I love good bagels! When I was in visiting in New York, there was an authentic bagel store on the corner that seemed as though it never closed. The bagels were always fresh and delicious!

Do u then form them next day, and then kettle and bake (without refrigerating again)? I'm hugely limited on space, this process would be great for me, if that's what u do and it works. Do u mind answering that? Tia

If you do this every day,the same measurements, flour, sugar,salt and or other ingredients the girls waste more time adding it than actually preparing the dough. Put most of the ingredients in single bags to just open the bag and add it ready for the almost last step of the rolling machine

I like the video. I would rethink your process for adding the flour. The bags of flour is set on the floor, then put in the side of the vat and opened. The contamination from the floor is now introduced into the product. Unsanitary.

And also I’d point out the tubs on the floor while putting dough from mixer and then onto table, sliding across work surface and dumping dough right on the spot it was just on. Provided they are going to be cooked but these are bad food safety practices and would be dinged by the inspector if they walked in. Always practice safe food handling practices all the way through the process. 👍Other than that this is a great video.
That way the Bagels are crunchy on the outside and chewy on the inside! Just like a soft pretzel. I love my bagel with cream cheese in the morning, with black coffee.
I'm trying to understand the claim of this video and the comments. How is this the best bagel shop in a city like Chicago when all their ingredients are commercial quality (or lack there of)? The method/process is entirely industrial also. I'm sure it's good but "best?" No chance.

Observation: This place is akin to Katz Deli in N.Y. . . . the kosher family is long gone and workers today look like prison-release people. We are supposed to accept that, not see or judge that? I'll opt for 6 bagels/ $3 at Kroger.

Watching the gal, putting the flour bag, on the edge of the large bowl, after just lifting the bag off the floor! VERY UNSANITARY! Part of the bottom leaning into the bowl, whilst shaking the bag of flour, and, slicing the paper bag, with knife, and possibly, some of the bag pieces, falling into large bowl!! Extra Fiber? I won’t eat these Bagels! Couple things wrong with this display!! No Health Department check ups??

Yes, the formed bagels are refrigerated overnight. So the bagels made every morning are boiled and baked the next morning.

I thought the same thing... Much better if you use plastic containers instead of plastic bags so you can reuse them and avoid the waste...
