I noticed that I get more bubbles using a whisk attachment--the beater attachment like in this video may help. Also, once it's all mixed and ready, mix it and smooth it by hand with a rubber spatula, that knocks out a lot of bubbles. For final smoothing after frosting a cake, chill it and give it a quick run over with a slightly warmed smooth edge.
You can use stabilized whipped cream to frost any cake. But i wouldnt recommend covering it under the fondant. Whipped cream even the stabilized one may not be able to hold the weight of the fondant as it has too much liquid in it. Buttercreams work under the fondant.

Try non-dairy cream. chilled utensils. After sometime, it gets curdled so u need to pipe with it quickly as soon as it is made

It should be dissolved completely and melted. Not exactly hot a bit warm may b.
