You can't go wrong-o with the Rongorongo.
Here we have another Smuggler's Cove original cocktail that is not in the Smuggler's Cove Book. With the combination of delicious rums, pineapple juice, and cinnamon syrup, what more can you ask for? And we shouldn't be surprised at how good this drink is as it was created by the 2017 Imbide Bartender of the Year, Steven Liles.
Coruba: I should note that looking back I’m not sure at all if they originally used Coruba. I may be conflating things as on my last trip there I noted and was told they were subbing Monymusk for Coruba in other cocktails, not specifically the Rongorongo.

1 dash Angostura.
¾ SC cinnamon syrup
¾ pineapple juice
1 oz lime juice
¾ Plantation Stiggins Fancy Pineapple Rum
¾ Monymusk Classic Gold
¾ Plantation OFTD
SC Cinnamon Syrup
2 cups water
3 6-inch cinnamon sticks
4 cups granulated sugar
Add cinnamon and water to a saucepan and bring to a boil. Add sugar until dissolved. Remove from heat and let sit at room temp for 12 hours. Strain and enjoy!

I'm going to have to make myself a small bottle of pineapple rum. I wasn't really impressed with the Plantation Stiggins Fancy, but I do have a bottle of 3-Star and Original Dark and a pineapple just waiting to be macerated in them.

Great video! Reminded me of the Aku Aku, another great pineapple-based drink from SC. I love the use of Cinnamon Syrup and the mix of rums, this one is going on the home menu for sure.
made this already on my own without knowing the recipe - or really really close to it. We all know pineapple and limes are one of the best combos in tiki cocktails. Sometimes I add dram for some extra funk. or maybe some Orgeat... btw I keep all my syrups frozen in small containers so I have them ready at all times - highly recommend this for the at-home bar.
I may do the same with my syrups and sometimes juices, but I will never tell! Don’t want to “fresh is best” police coming for me.
@@makeanddrink Would love to see a video or explanation of this. Do you let it dethaw first or throw the frozen ingredients into the tin while making the cocktail?
@@dylanhancock if I use something frozen I generally plan ahead to let them thaw before adding to the tin. But really nothing to precise.

As I didn't have the exact rums you used on hand, I substituted Coruba for the Moneymusk and Hamilton 151 for the Plantation OFTD and the drink came out fantastic. I used a 1:1 Cinnamon Syrup recipe rather than the sweeter 2:1 Smugglers Cove recipe and thought the drink was still very well balanced.

I don't love pineapple. But this is probably my favorite pineapple cocktail next to the Painkiller.
Rums i use to counter the sweetness of pineapple are...
3/4 oz. Smith & Cross
3/4 oz. OFTD
3/4 oz. Coruba

Used Appleton 8, plantation 3 Star (tried to infuse it with pineapple for a few hours today) and Hamilton 151. No idea if that tastes similar but was still great
Cool video. When this drink came out I didn't understand its connection to Rapa Nui. Still don't. So I riffed on the recipe to include ingredients with a bit more of a connection:
• 2 oz Plantation Isle of Fiji Rum
• ½ oz Pisco
• 2 oz Pineapple Juice
• ½ oz Lime Juice
• ½ oz Cinnamon Syrup
• ¼ oz Triple Sec
• 2 dashes Amargo Chuncho
Blend on high for five seconds with crushed ice and pour into tiki mug.
Sounds great!

Wife and I just tried it both ways, can confirm both are delicious. Thought the proof difference would be discernible but nope... only a barely perceptible increased tartness from that extra 1/4 oz lime on SC version compared to Imbibe. Using Hamilton 86 in place of harder to find Coruba/Monymusk, highly recommend.

Thank you! The lights are LED in a groove that I routed out about 1/2 inch. Not fun routing that into old redwood boards. Id suggest the COB style LED lights as they offer a more diffused look. It's very difficult to get affordable LED lights that are diffused, and even the diffuser covers don't work well. But if you want to film anything they are a headache because of flickering.

I just made this and it was fantastic. Thanks for the recipe! The only change was that I used Appleton Signature instead of Moneymusk since I didn't have any Moneymusk. I might even give it a try with Appleton 8 or 12. This is one that I'll definitely be making again.

Have to give this a try. I like that there is no esoteric ingredients like many modern tiki recipes seem to be pushing for these days.

Looks so good 😊 question where can I get that bottle of Moneymusk? And is it better than Coruba?
It’s not something I see often. I found it on a deep discount. Doesn’t taste like Coruba. Monymusk is more of a basic lightly aged Jamaican rum (in Good way) and while I haven’t tried side by side, probably leans more Appleton.
I think this drink is a variation on another Steven Lyles drink the Bumboat, which is in the SC book. He swaps the pineapple rum for rye, which goes really well with the rest of the ingredients. The Bumboat does have a few drops of almond extract on it, I wonder if it would work in this drink as well.
Definitely something I'd like to try in the future. Sounds like a great fall recipe
If you have an awesome pineapple shrub but not fresh pineapple juice, do you have a recommended variation of how much more or less to add?
Wish I knew but honestly I have no idea. Would prob suggest to start with a small amount and then taste it im until its dialed in.

Rongo Rongo rhymes with Pago Pago. How do you make your cinnamon syrup, as per the SC recipe? How long would you keep this for refrigerated in a sterilized bottle? Another great recipe that I plan to make and enjoy. Heck- I even bought a Hamilton Beach drink master to try these (as well as making the Ramos Gin Fizz easier to make).
Yes it's the SC version. For how long it keeps, I have no idea. Mine has been in the fridge for months and it seems ok.
The drink masters are amazing. Just love how easy they are to use and while mine doesn't have a detachable spindle for cleaning, it's still easier than shaking and better.

What do you think of Monymusk Gold? I have a bottle at the back of my rum stash. Is it time to pull it out (or use up my open Coruba bottle)?
Good questions. I must confess that I found it from a retailer in SF for $9/bottle. I think Smuggler’s Cove found the same deal. For $9/bottle it’s the best rum I’ve ever had. If you paid $35, I don’t know.
