If your in the Toronto area you should try TYMEK'S Natural Foods in Etobicoke for naturally salt fermented Sauerkraut, much better than that store bought stuff. Another thing we used to do for this is put Apple Slices on top of the kraut with the onion.
Thanks for your comment! I'll have to check out that store. I have made sauerkraut myself just using salt as you mentioned and it is much better. My mother never made roast pork with apples. Just one of the many regional differences in German cooking.

My mothers used Bick's Wine Sauerkraut for years. The others tend to be really sour because they are fermented in Vinegar. But use something you like!
