And I'd be curious to see how all the dirty pots, pans and dishes are collected and cleaned throughout the night.
Used to do something similar but with the addition of lambs kidneys and cheddar. You could feel your eyeballs popping! Awesome special treat after a hectic service. Great work chefs ❤

Jack mate, you are the nuts but should of put Julia assembling that sandwich, the potato bread is the frickin' star ;). Please do something with pheasant, there are plenty of shoots with excess birds (especially commercial). I belong to a small local shoot under a coastal sky covered by a Spitfire most weekends. I confit the legs and use them to make a luxury sandwich, sure you could bring Fallow magic to the game, man. Love all you guys and what you do! EDIT: Took me ages to write this!
I love putting the bacon touching the tomatoes in the middle, just something about that bacon fat mixing with the tomato juices and then splashes of mayo coming through as you chew washed and refreshed by the lettuce, god damn blts are naughty

Old school my friend was whole eggs, English mustard, vinegar and good old veg oil 😆
If you add just a little water in the end, you fix the oily look on the mayo and bind the emulsion better ;)

Seems like too much bread for the amount of bacon. Probably leave out the middle piece. I’m a BLT purist though, the king of sandwiches😂 Good idea marinating the tomatoes with the shallots, going to try that next time

Did you use both red and white wine vinegar, or was that last bottle something else?
He says sherry vinegar and rapeseed oil but I think the first bottle is just the oil and the second the vinegar

Just toast the outside slices in the bacon fat (one side only) and do away with the middle slice?
Looks great…but the fat doesn’t ’caramelise’…it renders. Those dark bits are generally proteinaceous fluid ….
