Yeah they are pretty good! mostly tart and citrusy, they are mostly peel to be honest.

excellent video, vibe - and set!! question: when adding water, are you adding weight equal to the sugar you'd previously added (a la most simple syrups) OR to the weight of the mixture as a whole (which would be 2x the sugar weight)? thanks

How did you go about calculating the amount of acid to add to the cordial?
2% by weight so: for 100g of syrup use 2 g citric acid. I had 350g syrup so I did 7g acid. (Approximately)
You can of course use more or less
Ya blood oranges now here, but no kumquats sadly. BUT I do have a kumquat liqueur!
I bet blood orange would be tasty!
So how much hot water did you put in? Equal to what? Would you say that adding 2% citric acid and 1% malic acid to any flavored syrup would make it a cordial? I find cordials in general very interesting but this seems to be the first simple recipe I've come accross.
Hot water is equal to the weight of sugar used, and the weight of fruit.
I think of cordials as a citrus thing. Adding citric acid to raspberry for example might be weird because citric acid is in citrus not in raspberry (for exampe)
Of course you should try things that sound good to you and if you want to try making a cordial with other fruits, go for it!
