can you use coconut sugar instead of honey and if yes is it the same measurement? I made just one batch of this recipe today since I have just a small box of Pomona's and I used the lightest colored honey I had cause I didn't want to lose the color of the apricots, hence my question about using another sugar substitute. Discovered Pomona's canning book is on kindle unlimited so I was able to capture the written recipe. I used my own limes juiced, frozen, and then thawed for this batch, same with all my homegrown frozen peppers which I just thawed on a paper towel. Came out delicious and got 5.5 half pints.
