    The layers are so dainty! And it's likely super fluffy! Does the coconut end up flavoring the mousse much?

      Hi! The high-quality coconut oil I used smells and tastes clean and light (I really don't like the taste of coconut oil otherwise) and does not affect the taste. However, if you want to ensure that there is no coconut taste, use MCT oil in place of coconut oil. Cheers!

    I made this over the weekend for a banquet. I'm wondering what kind of matcha powder you use. The kind I have is imported from Japan & I was hesitant at following the 3 tbsp in the recipe because the kind I have is so potent. Alas, I followed it and it turned out very, very bitter. I refused to waste the layer though so I added an extra 2 tbsp of sweetener to the matcha layer - it just finally got to the point of being bearable but it was still bitter (I understand that with any matcha dessert, there's some degree of bitterness because- well, it's matcha after all). Next time I make it, I'll have to lessen the amount. It's too bad that when I do so, it won't have that beautiful green color. Or, of course, find & use a less potent brand. :-) It was a BEAUTIFUL cake though. So light & decadent; not overly sweet. I can't wait to make the coffee one.

      Hi Mary! Thank you so much for taking the time with the detail in your comment to assist others who may encounter the same issue. I am so sorry that I was not more explicit - I did not use the top grade of matcha, which I reserve only to make the wonderful tea. I used a secondary brand (i.e. not readily available outside of my area) so I will make inquiries as to ones that would give the green, but with less bitter. If, in the meantime, you find a good, reasonably priced (not so potent) brand available that you would recommend for this purpose (e.g. available on Amazon so people can see the label) please let me know and I'll put a link into the description.       Hi Martine! At 1:05 in the video, I mention that the pan that I actually used was 15 cm (6 inches) in diameter. Just past that, in the video, I also mention that a more standard size springform pan would be 20 cm (8 inches) which would give a cake that was not as tall. Cheers!
