    My favorite arugula recipe. I think I will add honey to the dressing mixture. I also added walnuts, dried cherries, feta cheese, spinach. It turned out just as good. Thank you.

      Oh yes those are all great options. Adding the honey to the dressing would definitely pair well with those extra ingredients like the walnuts and cherries.

    That looks like a very delicious & healthy salad. The lemon juice & white wine vinegar go nicely with the arugula.

    I agree with Pete’s comments about the flavor combo in this salad. Avocados are one of my favorite foods so this salad idea will hit the spot. Ummmm,.....

    Note: for some extra flavor, I place the cut up avocado in the seasoning mixture, then strain through a mesh strainer into the salad, mix, then add the nicely seasoned avocado on top!

    I love making this salad, and like with every salad I love a crunchy/Snap/crispy texture like seeds or nuts… highly recommend some Pumpkin Seeds 😍😍🤤🤤🤤🤤🤤🤤🤤

      I will have to try that! I try to get more pumpkins seeds because they are such a great source of magnesium.

    That's an awesome salad Eric: creamy, peppery, tangy and sweet. I still prefer the British name for arugula, we call it 'rocket' and it's my favourite of all the salad leaves.

      You could omit the dijon and the salad dressing still works but I really like the flavor that it adds.

    Eric, if I may ask, where do you get the Tuscan Italian white wine vinegar? I live in Los Angeles, so I have all kinds of stores here. Thank you for another terrific recipe!

      The exact product I use is Lucini brand Pinot Grigio Italian Wine Vinegar. Lucini is the most readily available high quality option, although not all grocery stores carry it. I can usually find it at Giant and Whole Foods and it is also available online. Thanks again for watching!

      Oh yes there is a HUGE difference in quality. This brand also makes premium olive oil as well but they are a little easier to find.

    Another way to easily remove avocado from the skin: cut it in half like you normally do, then cut those halves again in the same direction, so it is quartered. Then you can easily peel the skin off each of the quarters. No need to scoop!
