How to Make Pozole Verde Recipe (Puebla Style Pork Stew)

  • Pozole Verde
    Ingredients:
    -3 chile poblano
    -3 Anaheim chile
    -1 yellow onion
    -5 cloves garlic
    -2 tbsp Mexican oregano
    -1 tbsp cumin
    -2 tbsp peppercorn
    -1 bay leaf
    -1 cup cilantro stems
    -3 cups canned hominy
    -2 lbs pork butt
    -2 quarts chicken stock
    -salt to taste
    -lime to taste
    Garnish with cilantro, radish, avocado

    I grew up on a different type of posole verde. It’s more like posole blanco but still has green. You take tomatillos, a whole bunch of cilantro and parsley and a white onion. Dice everything up and sauté everything in a little bit of oil until the greens become vibrant green and soft. In your main pot, you take some pork and water, bring to a boil until the pork is fully cooked through. Once your pork is cooked, add all the greens to the stock, along with a bote of hominy, and bring to a boil. At this point, if you like heat, you add in a can pickled jalapeños. Once all the flavors get to know each other, it’s ready to serve with finely sliced cabbage, raddish, a sprinkle of oregano and lime slices for delicious acidity. Don’t skip out on the tortilla chips for more crunch. This is the way my family makes their posole (from guanajuato) so it could just be a regional thing.

    I'm not sure of the spice for my kiddos for the verde. But I made your pozole rojo on Thursday and the kids almost ate a whole crockpot full! It was delicious! Definitely will be making again!

    I never had pozole verde growing up until in my early 20s my aunt decided to bring pozole verde to our family event. Ever since then, I learned how to make pozole verde. I use chicken thighs instead of pork. Both pozole rojo and verde are very comforting foods to have

    My mother would use yellow sweet corn instead of hominy for the posole verde. And chicken to.
    Top it off with diced onions, diced radishes, and shredded cabbage with lime and salt with a side of tostada chips 🔥

    I love anything verde. The only thing I would do differently is wash the tomatillos after husking them because the stickiness can hold dirt and gives a bitter flavor. I personally prefer using serranos over jalapeños and use them instead for most of my recipes so was glad to see you use a fair few of them. This is one of the most comforting food series for me ❤ can’t believe I forgot to mention. I’m a big wrestling fan and I just see a family relation with Matt to Seth Rollins 😂

    I'm old school Matt. Grew up eating menudo and posole. Never heard of green posole. I have so many questions for you. For me there's to many ingredients in it. I guess I'm used to eating it how mama made it. But of course I'd taste it. To see the difference. Love watching your videos. ❤👍❤

    Didn't have the green often while growing up, mostly the red. Try the white pozole one day when you have time it's pretty good too.

    This is not really pozole verde! If you grew up in the south of Mexico the pozole verde is made with pipian! Not tomatillos
