#Pozole
-2 lbs pork butt
-2 tbsp garlic
-1 yellow onion
-4 chile guajillo
-4 chile ancho
-tbsp chipotle
-2 tbsp mexican oregano
-1 tsp cumin
-1 tbsp black pepper
-1 bay leaf
-2 tbsp tomato paste
-1/2 cup rice vinegar
-1/4 cup rice oil
-limes to taste
-cilantro to taste
-1 16oz can hominy
-2 quarts stock or water.
-cabbage, radishes, onion, cilantro, avocado, corn tortillas to garnish

If you don't have a high power blender, you have to strain the chile paste. Otherwise the final soup will be grainy and unpleasant.

Even tho I’m white I grew up always eating Mexican food. Pozole and Menudo are probs my favorite things. Pozole is just so comforting and I love making lots of it just to indulge for the rest of the week.

Also BBQ'ing/smoking meats. I'm teaching myself how to do this, but am clueless with what spices to use for what rubs. I like a good dry rub with a bite to it, but with a little sweet sauce at the very end. Maybe I should request ribs because there are endless flavor profiles that can go down with some ribs. Fa sho!

Although not traditionally how I'd make it, this still looks very delicious! I will say you lost me with the avocado, tortilla, and sour cream but that radish makes up for it😉. Keep it up!
