French Onion Shortrib Day 5 1/2 of Good Soup Challenge

- Well Here we are at Day 5 1/2 of #goodsoup

Ingredients:
(For the braise)
-3-4 large cut short ribs
-1 yellow onion diced skin on
-2 sticks celery chopped
-1 cup mushrooms chopped (i used maitake)
-sprig thyme
-sprig rosemary
-1 bay leaf
-tbsp whole peppercorns
-oil to cover bottom of pan when sautéing
-water or stock (for more flavor) to cover
(For the french onion soup)
-1 quart caramelized onions
-1 cup flour
-2 quarts strained shortrib braise liquid
-salt, pepper, citric acid or rice vinegar to taste
-garnish with gruyere cheese, sorry I kept saying gouda in the video i dunno why lol
-finish with your short ribs

Matt, this is worse than torture, all these soups are god tier stuff, this one looks so tasty, probably the tastiest looking one so far.
This series is definitely one of my most favorite on RUclips so far, keep up the great work bro.

just made short ribs last night, real slow n low braise in the oven. The secret to that umami bomb is a few dashes of fish sauce. You can do miso/soy/anchovies etc but a little fish sauce in a beef braise yields some outrageous results

here some things I noticed between the onion soup I eat in Paris everytime and yours, I've never seen roux in any of the soup, the onions are not thickened like it's just buttery/golden onions and the cheese on top is usually gruyère cheese or emmental.
With that being said I'll try this version of the onion soup

So if you don't have the 'right' stock or veggies; substitute with something similar or that can improve the flavor overall.

Matt, I have a question. I love french onion soup, but I haven't had it in years because cleaning the cheese off the bowls and pan SUCKS. Any tips on getting the excess cheese off without losing you mind? Love the videos :)
I got an idea dunno if it will work heat the bowl with cheese while still heating deglaze it to remove the cheese

in germany theyre prolly one of the more inexpensive cuts to get, especially the end of the ribs where there is more tissue... perfect for long cooking times

Smoked Gouda huh? I’ve always used Gruyère or sharp Swiss. But for this particular dish the meatiness of gouda probably does work better. Also WHERES THE CROUETTES!?!
