I built a backyard offset pit this last summer, finished it about a month ago. 36" diameter cook chamber 20" fire box and a nice big stack. Built it for under 1000 bucks and it puts better smoke on a rack of ribs than my pellet grill could ever dream of. Love that thing.

Please re-visit the Workhorse 1975. The caster-model or the wagon-model (you only covered the super-expensive trailer-model, to my knowledge). It hits every single thing you like about this video's pit... but ALSO comes with 3/8" thick steel, a cowboy firebox, and an upper grate... Oh, AND it's cheaper. Would love a revisit since you're reviewing pits again! Sincerely, --An offset owner because of you and Brad's channels.
I'd love to see some cooks on Boathouse Smokers Texas Traditional pits and how their damper works. I know you were out there years and years ago, but an updated video on some of their newer pits would be awesome.
I use the WSM in my cul-de-sac in the city. That won't change. What I see and from other videos from Jeremy is a common build with the smoke stack, when he says it is a good smoker. It isn't just a pipe up, but a funnel to the stack so the air is pulled through. I have even seen the video from some years back where he takes the cut off tool to a baffle by the fire box for flow.
That price is crazy. I had a custom 24x60 built from a Texas fab shop for 3250, had to pay delivery, so I was at 4300 total. It was also made from 3/8 steel. Cooks like a dream
Leviathan Pits Terraton 200 has a similar throat arrangement. Firebox convection comes up an inclined duct, and then current is split into an upper and lower stream. Since they are in England, it may have escaped notice by Texans.

Hey Jeremy. Love the videos have become addicted to BBQ lately. Bought a Traeger about 2 years ago and have used the hell outta it. I really want to move in to an offset. I have about $3k im willing to spend and was thinking the Workhorse 75 or saving for the Goldee’s offset, but I did the measurements on them and can not justify a rig that big in my backyard. Any smaller offset recommendations for those of us that can’t house these large pits but still want quality offsets?
Jeremy: I use an electric smoker, only because I can't see how one can really control the heat using the randomness of wood/fire. My experience with using a turkey fryer to heat my still, for example, led me to purchase an electric still. With this, I can set it and walk away for hours and the heat will stay constant. Never had that with the propane.
Nice looking smoker. A couple things I dislike: The wooden handles will eventually rot if the pit is outside, uncovered. The fire box has a "lip" at the bottom, making it difficult to rake the ashes out after a cook. Other than that, the non foldable stack would not be a deal breaker for me if I was getting one. And an upper shelf is a personal preference that I would not want/need. Thanks for the review, but I will stick with my trailered Moberg 250.
When you said Tool Texas, I about fell out. I grew up in Gun Barrel City just across the lake from 7 Points. I'm sure you heard all those town names when you were there.
What is your opinion on the saying ribs fall of the bone are over cooked ? was told this sometime back and i prefer when i bite the rib it comes off the bone!
As long as you're reviewing things and finding the best, can you please figure out the best pellet smoker available at retail stores (walmart, lowes, home depot) for us that can't afford a fancy offset or don't have the time to deal with a fire?
In my opinion…M&M BBQ has the best looking firebox air intakes ever made. That tombstone box would be a better looking box on that pit. But that being said, the sister in law will remain the queen of backyard pits

People get overly obsessed with completely even temperatures in the cook chamber. You need small warmer spot to speed up larger pieces of meat. Unfortunately meat doesn't come in the exact same size and thickness.
Love my Goldees pit too! They actually released the smoke king right after my pit arrived. I like that the firebox is slightly bigger on this one and appears there’s no real hotspot. Although the hotspot on the Goldees is very small
@CoolJay77 Don't know if Goldee's is better (as it might not be) but I can't imagine an offset that performs better. Like @Stormula1 said, the firebox size is a plus. I use full sized splits in mine. The simplicity of the firebox door - open or close, no grates to mess with. And the hotspot is relatively small due to the unique design of the Goldee's. Mad Scentist & Ant's have good detailed reviews
Good video (could have been great if you’d showed that blue model you loved so much that day 😜🤣💙). Seriously tho, I cooked turkeys & some ribs on my inaugural M&M rig cook at Thanksgiving (250 offset for those of you not Jeremy, who “met” it that day😅)…all their offsets are engineered & built like this and they run amazingly - lots of gripes about the cost, but if y’all knew the man hours they put into R&D and the innovation just that firebox transition does for a cook, you’d understand (worth every penny to me). Ribs came out exactly like yours (except where you said “a bit over”, mine were just about 15-20 min under). Turkeys were perfect. Can’t wait to run some brisket & pork butts soon. I have been in contact with Chris the owner and he was great and said they can modify the hight to accommodate me better from a wheelchair. The 40lbs hopper is one option I think would be helpful. I’m trying to make an educated guess on when I should order so I’m not dealing with Indiana snow when it arrives.

I don't reckon' I'll be spending $4000 on a smoker anytime soon....smoking meat is not that complicated. I bought an "Oklahoma Joe's" offset. It does just fine. Humans have been smoking meat for thousands of years without spending thousands of dollars.
It's an obvious thought based on the subject of the video. These many thousand dollar pits are becoming the norm for bbq. It's absurd. Learn how to run whatever pit you have and your bbq will be good. Quit wasting money on this kind of stuff.

I'm never going to cook more than a single brisket at a time so I don't need or want anything too large... waste of unused space. What would be the best offset (or other type) smoker to get?
It's not the extra size issue you think. The extra space allows everything to mellow out and provide consistency and ease of use. If the pot was the bare minimum yoy need you would have a hot spot burning your food.
Why is there no middle ground? Joes are 2 mm steel with 3mm lids. Why doesnt someone do a 4 mm all round. Pretty sure mm pits are 6mm and 500 kgs.🤔👍happy new year Jeremy, love your show. 👍😝

The wood chips don’t make that much of a different on the LSG 42. I own one and no doubt it’s an outstanding pellet smoker. With B&B pellets alone I am getting offset like smoke flavor!

The bypass system is very similar to what Lone Star Grillz does for their 20” models. I’ve used one for the past three years and it’s freakin awesome.

4k for a smoker is crazy especially if it’s that small not even a 250 gallon looks like the same size as Goldees smoker and Aaron Franklin Pit🤷♂️

The Chupacabra Ribnosious is my go to for ribs. Has a good balance of sweet and heat.

At what outside temp do y’all think you would need a Traeger blanket?
For storing? I'm not a fan... They allow things to rust more more readily, as they trap in moisture. And they freeze on in the winter.
