It’s a handy little tip that one. I get my cheeses from a local supermarket in Adelaide which is voted the worlds best supermarket and literally has everything but I’m not sure about regular supermarket chains. You can use mozzarella if you can’t get hold of it. 😊

Absent cilantro, you only THINK you've made guacamole. I'm sure it's good, too, what you've made, but it's NOT guacamole. Not really. And the pepper should be RED, btw, not black. Otherwise, the potatoes look INCREDIBLE! Thx.

The main problem I have with the original is the excessive use of salt in "the bed"... Back when this recipe came about, salt wasn´t as cheap as it is today... (Especially "rock" salt) But keep up the good work and great recipes... (And this IS a great recipe)
