  • We bring Saint David's Day celebrations into your home with attempts to make several versions of Welsh Rarebit from the 18th Century...with mixed results.
    The first settlers in our area were of Welsh descent, and although less celebrated in America today (compared to St. Patrick's Day), March 1st is the holiday of Wales.
    In Philadelphia, Welsh citizens would organize "Societies of St David" and have huge feasts on the day. Our Welsh Rarebit, is a simple dish that is easy to do at home for a quick brunch.

    The Conococheague Institute is just awesome and I appreciate all the living history you all do! I do have a question about this one. What type of cheese would be appropriate during that time period?
