I’m a total sucker for a crispy chicken breast. I love it with white rice, black beans and a sweet plantain. It’s one of my favorite meals! Not exactly the most carb friendly but I’ve made peace with my muffin top. 😂 I’m constantly learning from you so I might just try the pork panko.

Oh, I really like the tip of taking the chicken out of the skillet and finishing in the oven. Question: Have you thought about making the chicken in the air fryer? I don't know if you could cook it all the way in there, or still do the skillet part.

Hi Renee' and Randy! I thought one day, instead of using skin on chicken thighs, I would buy the skinless and brown them, a little, in butter and neutral oil, lightly! Then drain on paper towel. Pour out some of the oil/butter or leave it if there is not a lot. Put the chicken thighs or breasts into the fry pan and pour your favorite salsa over all. Cover and let cook on med low heat for approx 20-30 min depending on if you have thighs or breasts. Waala!!! Great with a salad or your favorite veg! Pork cutlets can be used as well. Fish fillets too! We love this and I made it up myself! Great with grated parmesan cheese or other grated cheese when serving! It's the quickest and best tasting meal with melt in your mouth chicken.

I have never used flour when making my crumbed chicken and I've never had problems with the egg sliding off, I don't put a lot of water and when I place my chicken into the egg and then into the bread crumbs I actually flatten the chicken right into it pressing firmly with my hand and that holds the breadcrumbs on my chicken, I have never liked using flour, as an Italian girl growing up in a traditional Italian family we never used flour but I'm not telling you or anyone else they shouldn't do so it's entirely up to you. May I also ask do you make your own croutons or are they bought store ones?. Thank you again so enjoying your channel. xx
Oh my gosh...chicken parm! Add a little mozzarella cheese broiled for a few minutes until golden and bubbly, add some warm marinara sauce and YUUUUUM!!! Or throw it into a salad made with Asian cabbage, shredded carrots, radishes, pea pods or sugar snap peas and some sesame oil and soy sauce dressing...maybe a few sesame seeds for extra crunch!
Gotta try this. My go to chicken is one Popeyes breast. Crunchy an delish. 3.13 cents total. I eat on it 2 days in salad or make lil chic salad. U get a biscuit also but can’t eat that. Thanks for the egg tip.

Hey Renee, thanks for this recipe and posting the technique step-by-step step. Have you tried the 3-2-1 breading with grated (jar) parm, flax and almond flour? Works great too and I’ve cooked these and pork chops many times in the air fryer. Love your channel!

Do you cook at ¨home¨ when you´re in Mexico? This would be so easy to make. At the tienda they will cut the chicken ¨a la milanesa¨ so you wouldn´t have to pound it and you can get chicharron /pork rinds at any tienda/oxxo, just like chips. Just fyi!
We will eat lunch at home....but go out for dinner. But you are right....all of the ingredients are readily available in Mexico. A few years ago, we went on a food tour and watched them make pork rinds. Delish!

Hi Tina! You can simply reheat them in a regular oven.....or I use the microwave on a half power setting until it's warm. Full power will "cook" the chicken more and make it tough.

Funny...I had NO idea what pork rinds/pork panko are! Its Pig SKIN! High in calories, salt, & fat. But probably ok in small amounts. I don't think I could get myself to eat it. Lol I haven't eaten pork in 15+years. It "looks" good, but, skin.... ew.

You will like pork panko crumbs much better than almond flour…it cooks up crisp and golden brown. Almond flour doesn’t do that unfortunately

I don't like hot or spicy things....but that particular Buffalo Sauce from Franks is perfect for me. Just a little spicy flavor but not too much.
