  • Chicken Marango is my husband's favorite chicken dish. And lucky for me it's super simple! This easy chicken dish is light and full of flavor....garlic, wine, thyme, green onions....serve over rice with your favorite crusty bread. You can thank me later :)

    Living in NYC my anxiety is through the roof... watching this was so therapeutic!!! I really don't care what you share about...I just appreciate the sharing and connection where I don't even need to participate and talk!!! I can just distract my mind and watch! You're a therapist!!!

      Thanks Janice! I live in an apartment with a balcony that overlooks Central Park... it's now silent except for birds and sirens but we have an extremely high infection and death rate so even food shopping a block away feels dangerous!!! And the accumulation of weeks with no purpose to distract you begins to create alot of anxiety!!! :)

      Oh my!!! Living in NYC would stress me out. I live in a very small country town. We are asked to stay home but can certainly go to the grocery, etc. Thanks for watching and I’m sending best wishes. And....you are sure to enjoy my video coming out on Tuesday. Since you are in the city and cooped up....I’m going to show you a bit of beautiful slow country life ❤️

    Hey , found your channel when you adopted Pollux ! Made me cry! Love that you took him into your hearts and home! After seeing Pollux I think he might have rough or smooth coat collie in his background. We have 5 dogs of which 2 are rough collies , and your boy has similar features. Especially the dark color at the base of his tail. Whatever he is, he’s a sweetie and so blessed to have found such a loving home! God Bless y’all!

    Hello Renee'! I was just going through my fridge , freezer and pantry to try and meal plan for the next 2 weeks. I have everything but the white cooking wine and tomatoes.       Hi!!! You can always substitute broth for the wine....but your recipe won’t have as much flavor. I also plan my meals ahead!! Yay for us!! I make a cooking list for a full week and get EVERYTHING I need on one grocery trip. Makes my life so much easier ❤️

      You can substitute with broth but will have less flavor. But still good!

      @@WELCOMETOMYCURLS I love cooking with wine. My mother was an adventurous cook so I like different foods. She made a lot of dishes with white or red wines. I almost wrote exotic, but that would be incorrect.

    Renee, I made this for my family tonight and they loved it. I added mushrooms and green bell pepper, a little extra garlic, doubled the green onion, and I added some chicken flavor bouillon along w salt and pepper at the end. Thanks so much for the videos, I’m enjoying all of them.

    In general, I don't care for cooking and usually don't do it. But I have found some enjoyment in it during this pandemic. Which is VERY surprising.     I've been making this since seeing your video, and LOVE it. My favorite thing is that I can clean everything up while it's simmering. I do modify it a bit but hadn't heard of it until seeing it here. I hope you will add some more cooking videos soon. I cook for 1-3 regularly, and need some more quickly, yummy meals. Thanks!

    Hi Rene -- I made Chicken Morongo with diced tomatoes and it made this dish too watery. I added mushrooms which also are a bit watery. My advice is for those who have just the diced mushrooms on hand to dump out the juice. The cooking wine & oil plus mushrooms add enough liquid to this dish. Also make sure you use minced garlic as Rene states. Garlic powder and garlic salt make this dish too salty! Salute!

    This is a super, easy recipe! I'll be doing it. Some of my thoughts watching it, for what it's worth:
    - I love the fire-roasted tomatoes, and use the same brand.
    - Never use powdered garlic! No taste! - I use the jarred, minced that you do.
    - This tip from being married 20 yrs to a man from France and learned from he and his mom: Saute the garlic FIRST - for at least a few minutes - that releases the flavor fully. Then add onions, saute a bit more. All onion/garlic type ingredients should be added FIRST and sauteed in oil to get the flavor going, before adding the rest of the ingredients. Watch pro chefs - they always do this!
    - I always use broth in rice too. Makes a HUGE difference. BUT - Minute Rice is awful. Use Uncle Ben's original. You will taste real rice, and you will never go back. It's worth the 20 minutes cooking time. Incidentally, it's a brand French people use a lot. LOL
    - My French family taught me a lot about using spices. I love thyme and use it a lot! For a different flavor with chicken, you could substitute rosemary, basil, or a mixture of those. It would be very good.

    Hi Renee--I am going to try this soon. It looked delicious. I probably will use regular white wine so I can have a glass with my meal too. You are so good at this and I will view another cooking video next. I would love some of your ice cream for dessert! I saw your video on your lovely store and the curled ice cream looked divine!       Hi! I’m not a wine drinker...and if I do have a glass it’s usually the sweet fruity stuff. Not good to cook with! But certainly if you have a good wine...that would be so much better! Enjoy ❤️

    I have a suggested edit: Marengo instead of Marango. Sorry, I'm a retired editor and can't stop!
    I have been making Chicken Marengo since the '70s. A slow cooker recipe. Coming home at the end of the day, my home always smells delicious with that in the cooker. I use vermouth instead of wine. Did you know this recipe dates all the way back to Napoleon?

      I would add them at the same time as the green onion so they have a chance to sauté a bit before adding the tomatoes.

      Oh yay!! Honestly, you could leave out the onions. They just add a little zing but the dish would still be really good without them. Enjoy!

I have a 🇨🇦 confort food and easy recipe for you in 3 pots called shepherds pie à la Nicole; for 6 servings that can be frozen afterwards, preheat your oven at 350F, in a large skillet , put 2 tbs of olive oil, cook 1/3 cup of chopped red onions (they are sweeter than the yellow or white) until very golden, then add approximately 1 pound of lean hamburger beef and one pound of lean hamburger pork grossly mixed on medium heat for about 4 to 5 minutes, add some chopped garlic, salt & pepper and some fresh herbs seasoning if you like. When the pork no longer has any rosé colour, put your mixture at the bottom of a big lasagna plate. At the same time, in a medium large pot, boil one big diced sweet potato and a few smaller diced red skinned potatoes in boiling water (I do not add salt in my boiling water cause I have high blood pressure) until ready to mash. Keep a little boiling water, add some butter, milk and seasonings (I like to chop fresh parsley when I have some for extra colour and taste 👅). On top of the meat, put a layer of frozen and creamed corn 🌽 mixed together before or right on top of the cool-down meat. Finally add the smashed flavoured mashed potatoes and sprinkle some smoked paprika on top and it’s ready to cook. Cook for approximately 25 minutes at 350F and broil for extra 2-3 minutes as final touch 🥰😋😁 Enjoy as is or with a little ketchup 💁🏼‍♀️

      In this picture, it's actually a Texas Toast ciabatta roll. They are sooo good and quick to whip out. When I make my own cheese garlic bread, I use a combination of mozzarella and fresh parmesan. So yum!

    I made something very close to that last week.......but once breasts turned and ?? 10-15mins left
    I topped each one with mozzarella cheese, and parmesan top on for 10mins more
    OH BOY ......true
    House smelled great

    Looks yummie. Do you mind if I add some brainstorming ideas for chicken marengo? I would try cutting the white part of the onions at the beginning of the cooking. It has more juice and will add more flavor to your recipe. Use the greeen part as a garnish at the end for color and crunch. Here are some other possible ingredients: chopped fresh basil, parsley or thyme, sliced black olives (especially the dry wrinkled ones).

    What are fire roasted tomatoes, Renee?... are they spicy tomatoes?.. I never heard of them before!

      Hi Linda!! Fire roasted tomatoes have been roasted over a fire before being canned. They have a slightly charred peel and a very fresh taste. Not as acidic as plain canned tomatoes. I always prefer them in fresh recipes where tomatoes are the star ingredient. I don’t use them in anything I’m going to bake in oven.
