I was thinking ‘What person in their right mind makes their own chestnut paste?’ It’s truly a case where the canned stuff from France is not only so much easier, it’s better! I laughed so hard when you said that ’you could make your own. I’m not.’ Homemade chestnut paste is not worth the effort! I don’t know what magic they use to peel them, maybe an industrial steamer and brush rollers? Whatever it is, I’m happy to pay someone else to do it!
To make an easier version of the cake, could use ganshik bam sold at pyoneejums or shikpumjums. Also use the strawberry shortcake method, to spread whipped cream made with 1tbsp of corn starch to stabilize and decaf instant coffee or cocoa in between cake layers. Or the other way is to spread chestnut cream in between cake layers. Spread whipped cream on top of cake and sprinkle cocoa like tiramisu cake, and use pastry bag to make 6 round circles like clock, and place prepeeled chestut on top.

How many grams of castor sugar should I use instead of using icing sugar I find icing sugar is way too sweet &would prefer to use castor sugar instead?
