I always cooked Thai curry like you until my husband and I did a Thai cooking class when we visited Koh Samui.. they taught us to sauté the curry paste in oil until fragrant, add the coconut milk and then braise the chicken and vegetables in that. It is even easier and the chicken and veggies take on great flavor. I recommend giving it a go :) Love your videos, watching from Australia :)
I’m so glad you posted this today. I bought all the groceries I needed to prep for the week and all day I have put off prepping it. I saw your video was 35 minutes long so I decided I would watch your video while I prepped and I would stop when your video was over no matter where I was during the prep (since it is after midnight already). I got all five meals prepped right before your video was over! I’m surprised it didn’t take as long as I thought it would and you gave me the motivation to do it!

I make a similar curry recipe but without the peanut butter. It is amazing! It comes together so quickly and I can use up whatever veg are left from the week. Plus if i dont have chicken, i'll throw in a can of chickpeas. So good! :) Ilove your meal prep videos, so inspiring! Ive been doing it the last few weeks and noticed that i waste so much less. And, I know if i can prep, i will just be setting myself up for success when the snack cravings hit. Thanks for sharing!

I have a 3 month old and she just decided to stop sleeping through the night (yippee!) so I just watch your videos for inspiration all night haha. How long does it typically take you to prep all those things?? And can you taste the cottage cheese in those egg bites? They look so good and fluffy but the cottage cheese is throwing me off!
Neither of us eats cucumber but my partner-in-crime likes pickles so when we get cucumbers in our food delivery box he makes refrigerator pickles. I make him the egg bites for his breakfasts during the work week, but in the oven since we don't have a sous vide or an instant pot. I have found that it is working better to pour the egg mixture into the muffin cups and then add the shredded cheese to each cup. When I had the shredded cheese in the egg mixture I would sometimes end up with ones that had no cheese and others where a lot of the cheese plopped out at once.
I see you like hummus & wondered of you ever made it yourself. Since I'm not a fan of chick peas, I make mine with cannellini beans & it's delish. Thought you might like to try it. Sometimes I add chives, or basil or a bit of mustard too. I think I make it differently each time. Thanks for sharing Jen. 1 can cannellini beans (15 oz), drained and rinsed 2 tablespoons tahini 2 tablespoons extra virgin olive oil juice of 1 or 2 lemons 1 clove garlic, minced or 1/2 teaspoon garlic powder or garlic paste 1/2 teaspoon onion powder salt to taste

If you happen to have any Indian grocery stores near you check to see if they have the small, yellow mangoes! I've heard them ataulfo and champagne. They are AMAZING.
You inspire me so much. I would like to know how long to keep food. I had some chicken breast in fridge that I cut up and put in food processor to make chicken salad. Is one week okay to use it? I don’t like to waste food but I never know when to toss or keep. Perhaps a video on food storage ideas. Thank you!
Iam meal prepping while watching u meal prep lol i do my prep on saturdays bcuz my work week is from sunday through fri morning and idk where i would be with out doing this especially on days i have to work longer hours and i have a teenage son so its great to have meals on hand that he can simply heat and eat so i dont have to stress about what hes going to eat while im at work so iam definitely all for meal planning and prepping

I use the stems of my cauliflower and broccoli. Just peel them a bit and then slice them up and stir-fry them with other veggies. No one in the family can tell they are in there.
What I heave learnt from this is that I need a better food processor. Mine just doesn’t cut it for hummus. I can make awesome white bean dips... but hummus still comes out a bit bitsy.... definitely need to invest in a higher quality food processor!!!
Have you ever tried adding either sweet or dill relish and boiled eggs to your tuna salad......I love it that way!! Amen.....I am with you about the Cilantro! Always love your videos! You are such an inspiration to me! hugs xoxo

I'm going to try the celery in water I've just wrapped mine in foil to keep fresh.

I find that cooked meat keeps well for a week! I would say smell it and use your judgment :)
