Hi everyone! Today I present to you a very tasty and healthy pasta recipe! Wholemeal spaghetti in tomato and walnut cream with pan-fried aubergines is a delicious first course, perfect for lunch or dinner. Instead of wholemeal pasta, you can also use white pasta. If you avoid Parmesan, this pasta also becomes vegan! The second recipe is linguine in cream cheese with fried aubergines and cherry tomatoes. my family loves this delicious pasta and I make it very often! - 250 g of wholemeal spaghetti
- 1 eggplant
- 10 cherry tomatoes
- 2 cloves of garlic
- 5-6 walnuts
- Parmesan
- 1 hot pepper
- Salt and pepper
- Olive oil

- 1 eggplant
- 250 g of pasta
- 15 cherry tomatoes
- 80 g of pecorino or parmesan
- Milk to taste
- Salt and pepper
- 1 hot pepper
- 1 clove of garlic
- Parsley
- Olive oil
