I’m Japanese and of course I’ve eaten Kiri-mochi. Usually, we grill it and season with soy source. We put them in soup for traditional new year dish called “zoni”, but we grill before put in the soup. Maybe you better grill to soften before make it in the dish. Love your experiment btw!!
If I were a vegan cheese company, I'd be stampeding for glutinous rice cakes!!! Whoever uses it to make a vegan mozzarella is going to be ridiculously wealthy!! Vegan pizza will move into a whole new realm! Not to mention vegan lasagna!

Got my lime bubbly and very mild flavored ramen with tofu and sauerkraut lol. I don't know if I like kimchi but the sauerkraut seems to fill a similar flavor void. Looking forward to going to an Asian grocery store after all this and stocking up. I really want to make the rice cakes dish 💖🙏

I had this dish while i was living in Daegu. The restaurant owner cooked it in front of us. We (3 very white Americans) just kept saying "mild. Mild please". She kept saying she got understood. Let me tell ya, it was not mild at all. We suffered. It was delicious. But i couldn't taste anything else for 3 days after.
Besides being good savory with soy sauce, kirimochi are also wonderful for making desserts at home with sweet red bean paste (anko) such as zenzai (red bean soup), sakura mochi, or daifuku (mochi filled with red bean and sometimes fruit).

I’m thinking about making fresh mochi and turning it into cheese with light colored miso or daengjang paste and nutritional yeast for color and more fermented flavor and oil like olive, grape seed, or coconut then I want to make Soon veggie ramen with this vegan cheese like they do with regular ramen and regular cheese popular in Korean food and Mukbang. I’ve actually seen that one Japanese RUclipsr Jun make vegan cheese from scratch like that. Yooooooo! Except it will be more like this mochi than regular cheese when melted on top of soup. Honestly even though she is not vegan and only by coincidence also Korean I think Maangchi is actually the best food blogger of all time like as a food blogger/RUclipsr she is #1 but you’re right up there with her and I love your channel because you bring that modern vegan experimentation that I’m all about. Maangchi often talks about vegetarian options for her dishes though and any smart vegan could easily take lots of inspiration from her classic Korean cooking and also turn it vegan if they thought of good substitutes for animal products of which there are oh so many. I think we can all agree she is the best. I would also experiment with incorporating... maybe agar instead of the wheat flour? i d k that sounds like it would make it so similar to cheese but again i d k! will have to try!

I can't find smoked tofu ANYWHERE. Help! I tried all the markets in las vegas and then thrive, amazon, etc. When I ask for smoked tofu at the asian market they give me braised tofu. How should I explain what I'm looking for?
Morgan Thompson I’m in the US and the only place I’m able to find it is in Canada. I bring a cooler with me and stock up whrn visiting friends. Our Asian markets don’t carry soft tofu either that’s not vegan. Ours are egg tofu. Bummer! Hope u can find it!
Im pretty sure it’s literally just fresh pounded mochi for that product but you have to steam the rice way more than for normal eating or something and pound it. I actually you’re making me wanna go to H mart if and when I can and get some Korean rice. Ay now I’m thinking about the magkoeli I could drink some of that heavenly hoochy rice milk like any day

Its slightly spicey but i think you don't have to use red pepper paste in the recipe if you cant handle the heat 😄
