    Yes please. It would be wonderful to see which brands of chips are the best tasting: chocolate, white chocolate, butterscotch, peanut butter and mint. You could also tell us which ones melt best and mix better with other ingredients. What a fun job to have.

    I use a very similar recipe to your first one, but I coat chocolate moulds with chocolate then fill them with the truffle mixture while it is still soft. Refrigerate until firm then seal the bottoms of the moulds with more chocolate once the bases are set I turn them out & no messing with the stiff truffles or dipping sooo much easier.

    These are really great cookbooks! I’ve made several different recipes, they’ve all been delicious! Also, there are some in here that my mom use to make and I’d forgot about, love that!

    Since cream and chocolate is ganache, but whipped ganache is already a thing, maybe call it ganache whip candy? Have you tried whipping chilled ganache? It makes a great frosting. :)

      Add milk to chocolate residue, heat and make a cup of hot chocolate, no waste.

    Crumpled parchment paper works good to straighten it when it comes off a roll. I don’t know if I’d crumple flat paper when you’re lining a square pan.

    Try using parchment paper to press the mixture into the pan. Lay a piece on top of the mixture then press.

    The best way to get parchment to fit a pan is to wet it first, that softens it makes it pliable

    I wish you would tell us how to store the candy. I have to make some in advance. I need to know if something freezes well, needs to be stored in the refrigerator or stored another way. I can't make all the yummy candies you have shown just a day or two before Christmas.

    I make oreo truffles every year. If you do the oreos first then add the Nutella. I just use one pkg of soft cream cheese for a family size oreo pkg

    Tell stories! I keep wanting to make suggestions! LOL. Spray your gloves to keep things from sticking! Yes try the brands. Some I know has more wax in it and affects melting and flavor.

    I find white chocolate melts easier in a glass bowl, but making sure it is totally dry or it seizes so easy. No more than 30 seconds for the 1st time, then 15 seconds at a time between stirring. I make a LOT of white chocolate candies & don’t have a problem with it seizing. I also use coconut oil instead of butter, it could be the water in the butter that is giving you a problem too.

    FYI: The Idaho Spud Candy Bar was a combination of a light cocoa flavored, soft marshmallow center covered with a dark chocolate coating sprinkled with very finely grated coconut. There was zero coconut inside the candy bar. Easy to duplicate! Just make homemade chocolate flavored marshmallows. Allow to set up. Cut into desired shape, dip in melted chocolate, and dust with coconut that has been run through a food processor (I like to toast the coconut).

    If you spray your pan before you put the parchment paper in it, it keeps the paper from sliding around.

    If you put a little bit of oil . in your melon baller . Your chocolate or any kind of batter will slid right out . Use a oil that has no flavor . I use vegetable oil. . Just a little tip for everyone.

    I think you would be better off if you heated your cream to just under boiling. Pour that over your chocolate. Even though it looks like it won't come together. Trust the process and mix till chocolate is soft, then bead with mixer until fluffy creamy. As your ganache cools, it will become stiffer. Refrigerate scoop into balls and dip into chocolate. Or rolling in cocoa powder.
