Now it's one of the most expensive fish in the U.S because of the rebranding as Chilean Sea Bass. Just goes to show how marketing can change ones perspective so heavily.

You are 100% correct about the issue with the temperature of the oil. It was way too hot as the breading burned prior to the fish cooking all the way through. And your solution was the correct one. You have to get the oil to a steady controlled temp prior to frying anything to avoid exactly what happened. All good though and you were spot on in retrospect. Great video as always sam!!

Fun fact for cooking extremely well marbled beef like Wagyu, there's so much fat that you usually dont need any oil in your pan because it immediately liquifies and basically fries in its own fat. also, butter generally isnt a great fat for high heat frying because the milk solids can burn a lot faster than any other oils will start smoking
A side quest to get a picture with the farmers would absolutely incredible. Probably not worth it by itself, but if you can find another video to make in japan, that would be a hilarious side quest.

Fun little factoid about wagyu: you don't actually need to use any oil or butter to cook it. The beef is marbled with so much fat that in a hot pan, the fat will melt, render, and the steak will cook in its own fat! Also, steak tip: Use a high smoke point oil instead of butter when frying in a pan. Butter burns at the temperatures necessary to get a nice crust on most cuts. After the steak is cooked, you can go back and baste it in butter since butter tastes good. 👍
I also want to point out that thick steak is key. Nothing less than 1.5 inches and 2 inches thick is better. The reason is the heat will cook the meat so fast that it does not have time to do its magic. I can cut up nice looking roasts in to thick steak and slow cook them and they will come out to a meduim rare and will fall apart when you eat them. While the cut is nice in many steaks. Aa thick roast can still provide you with what you are looking for. Its also super hard to find anything cut thick.
Sam would you be interested in visiting what might be the lowest rated Taco Bell in the US? When you come to Buffalo for the wings finale, stop by the Elmwood Ave Taco Bell which has a whopping 2.1!

My pantry goes olive --> sesame --> grapeseed with grapeseed having by far the highest smoke point. It's perfect for searing fish steaks.
