To everyone asking, I think the temp is just when it starts caramelizing (changing color from clear to amber/brown) then quickly add the cream. Do NOT let it Caramelize too long or it will burn or be hard.

@phillyb8347 no it isn't. Any high sugar "candy" requires a temperature. If you bring it too hot you'll end up with hard candy too low you'll end up with syrup.

Lotus went international with their speculoos spread and some marketing team dreamed up the name "biscoff" cause speculoos would be too difficult for English speakers or something, but to keep their brand the same everywhere, they've now rebranded in Belgium to biscoff too. no. just no.

100g Water
200g Double Cream
125g Butter
250g Biscoff Spread

Yeah bit the finishing temp of your caramel effects the consistency of it when finished

You really don't need temperature. Once it's a nice amber colour it's ready. Temperature control is more important as caramel can burn quickly
