Friendly Rivals like Sonic and Knuckles and Ryu and Ken are always my favorite bc despite the back and forth between the rivals there’s still respect between the two

I like when the hero have both a friendly rival and a edgy rival. Both contrast the hero in different ways.
Mega Man often does that. You have the hero (generally the blue guy, ex: X), his bro/rival, generally in red (Protoman /Zero), and the edgy rival who wants to beat him, generally black or purple (Bass, Vile, Solo).
If you think about it. Wario is Nintendo's version of Bizarro from Superman. He has the exact same color scheme as him.
I find it funny how you used Shadow as your example of a “guy that’s gonna stick around”. He wasn’t supposed to but Sega say dollar signs

Dark Pit from Kid Icarus Uprising is one of my personal favorites. He seems like generic edgelord tryhard at first, but then you learn he’s a bit of a dork like Pit deep down.
For Sonic I know Shadow is the main rival for him now but I always prefer Knuckles as the rival for Sonic. The contrasting design they have with contrasting personalities makes their rivalry really fun to watch. I love when their relationship is the Goku Vegeta, “I’m better than you at this” but with a underlying respect when things get serious. A brotherly rivalry

One of my faovirte rivals is Erika Furudo from Umineko No Naku Koro Ni.
Umineko is a murder mystery game where the family of the main character, Battler, goes to their private island for a family meeting, murders start happening, and Battler is caught in a time loop where he has to try to solve the murders and argue with Beatrice, the woman claiming to be the killer, in proving that the murders aren't committed with magic. In the fifth arc of the game, we're introduced to Erika Furudo, a girl who washed up on the island. And she is the complete antithesis to Battler in every way. Erika is representative of the dark side of mystery solving. She's a master detective, and she basically sees herself as the protagonist of a murder mystery story. To the point that she knows that wherever she goes, a murder will happen, and she literally plans for the murder. Not to prevent it, of course, but to solve it after it's been done. Erika looks at the family on the island, these characters that we've come to know and understand across four story arcs, and she merely sees potential victims and suspects. She doesn't even see them as human, she sees them as chess pieces.
Erika rocks up to the family home and initially seems like a very elegant, classy woman. But it doesn't take long for her true colors to show, and for everyone to hate her guts. She basically targets one specific person, and decides that she is the killer, and she hyperfixates on that one person until she can "prove" she's the killer. She doesn't actually give a shit whether or not she did it, all she cares about it being right. She is the complete antithesis to the games themes and to the main character. The main character eventually comes to believe the creed of "without love, it cannot be seen", basically meaning that if he doesn't look at the events of the story with a certain amount of empathy and compassion then he'll never figure it out. Erika believes in the creed of "love makes you see things that aren't there", meaning that she believes that you need to be coldly dispassionate and motivation never matters, it's merely a side dish to the juicy main course of murder, non-essential to have.

I think Wolf O'Donnell from Star Fox is a cool and interesting rival. His alignment never really changed. He never aligned with Andross; the villain of the series. The only member of Star Wolf that was invested in Andross' plan to conquer the Lylat System was Andrew. Pigma is just a greedy bastard. Andross was just a job to Wolf. He only worked for Andross so he could fight Fox McCloud. Not that Wolf is a good person he is in charge of a large criminal hideout. He still doesn't like Fox but perhaps his respect for him increased from 64 to Assault since he saved Fox's life and gave him advice, even if he only saved Fox's life because he wants to be the one to defeat him. He's not evil either. While he'll help someone conquer the Lylat System he will help prevent all life in Lylat be destroyed as shown in Assault. The reason between Wolf's rivalry with Fox is unknown but some speculate Wolf had a beef with Fox's father.
I know Ryu and Ken are the poster boys of Street Fighter, but are you going to ignore the more interesting one Ryu has with Sagat?
Yeah, I love obsessed rivals like Sagat and Vegeta, the ones that were defeated and crave for another battle.
its interesting that you bring the wario mario point up at 4:19, but I'd argue that even though wario's clearly a foil to mario he's never really made to be a rival by nintendo. Their games rarely have either intersection and outside of some spinoffs they largely do not interact with each other, which is pretty nonstandard for "rival" characters.
In fact, I'd argue donkey kong exists as more of a rival to mario than wario lmao, or at least he's clearly been spun as more of one by nintendo than wario has (which games like mario vs donkey kong being an example of this)
Street Fighter has a good number of other rivalries besides Ryu and Ken: Chun-Li and Juri, Alex and Hugo, Sakura and Karin, Balrog and Dudley, Sagat and Adon, Luke and Jamie.

FFVIII Squall and Seifer. Even if Seifer is the main rival of Squall, it kinda doesn't live up to the player's expectations because of his witch's manipulation and his greed to be notorious.

Dragón quest terry is one rival that was satisfying to fight he was always a jerk to you and he would ocacionaly be one step ahead of you rendering some of those Journey to get a megufin just for him to be like he you where a little late kid maybe next time and not only that him getting cutcenes doing battles showing hes a realy capable fighter and all on his own showing the huge contrast to you the player that relys on friends to fight and he is all about being a loner but once you know the truth to his story hes actualy one of the most sympathethic rivals i witnessed i dont want to spoil because i know in a future DQ6 will finaly get a remake and a revamp on the story they ambitoned it was put in a halt because of crono trigger y guess a sacrifice had to be made for a masterpice
I thought you will mention the rival from Ape Escape
Sonic's an odd case, because I'd say both Shadow and Metal Sonic count as rivals. Their both identical, similar abilities, and both are popular recurring characters. You don't really see that for most characters, where they have multiple opposites to the main character, usually it's just one like Mario and Wario or Superman and Bizarro.
Edit: I suppose you could throw Silver and Knuckles in there too, but I've always felt they were more so rivals of each other instead of rivals of Sonic. I know Knuckles was made specifically to rival Sonic, but he has his own abilities in gliding and wall-climbing, and his design isn't very similar to Sonic in the way an opposite would be, at least in my opinion. Silver looks more like Knuckles than Sonic to me also.

I'm not sure whether she's a cool rival as I never completed this game and didn't play a whole lot of it, even when it was new even though it was an awesome game but your rival from Fable. Whether you choose to be good or evil, she will pick the opposite and her outfit will different to reflect that.

Riku isn't really a rival. He's the true MC.
Gets way more development and growth than Sora, gets more powerful, etc.
They literally had to make Sora "special" for some reason just so he can stay the MC. Otherwise, Riku outshines him by a ton.
