Potato and soy sauce does work, but it needs something to balance it like green onion. Warm potatoes salad with green onion and soy sauce thats been quickly stir fried in a pan is a classic Chinese dish. Also, anything with Asian flavours needs sesame oil to finish. I hope they have sesame oil because if not, that asian inspired tuna salad would be lacking umami to any asian pallet.
Watching the Michel Roux Jr years now, it irritates me that French classic is pretty much the only cuisine he is looking for ability with. It shuts out so many other styles of cooking and also, chefs who haven’t been classically trained had a massive disadvantage. I’d understand it to some degree on Masterchef France: The Professionals but this was so biased to his personal taste rather than versatile cookery.

Tarragon hollandaise can be quite nice served with certain veg. ie: asparagus. I then think if it as a dipping sauce and eat the firm asparagus as finger food. Delish! (Prolly not the way to eat it in fine dining 😹)
I have always wondered where the extra dishes go. E.G. on a critic test they make 8 dishes now, 3 go to the critics 2 to the judges 1 to the camera Where do the other 2 go ????

reduce vinigar , shallots and tarragon then mix with hollandaise sauce that gives you bearnaise sauce.@@rikparkinson2501
