That stairwell would be a mess if I had to carry pastries down there in practical darkness. On another note, thanks so much for uploading these episodes!

When did the trio of deserts start? During my childhood, desert was something you had on Sunday or very special occasions. Even as a restaurant diner, pudding was a treat and appreciated as such. I have a funny feeling that restaurants started the trio thing at about the same time as supermarkets upped their chilled and frozen pudding selections

I love sauces, and there wasn’t much with these desserts. There was a shortage of chocolate too (my favorite). Not much with nuts either (I adore hazelnuts). Not very much that would entice me from these three menus. (Maybe a sorbet, then a couple of chocolate mango pastries with a bit of chocolate sauce on the plate would do the trick ;))

Pastry is a very precise specialty. While many other dishes can be made without measuring, the science and knowledge behind pastries and cakes etc. is often very precise in order to achieve success. No one likes tough pastry or dry cake, let alone gritty cream.. Plus, pastry requires beautiful presentation. Each piece must look like a little gift.
