Antonin Bonnet looks scarily like a character from Shawshank Redemption. I've watched this episode a number of times. I can't unsee it.

It's very precise. It's also more than likely that the offcuts are used in other dishes, chefs are consistently against food waste as it represents money tossed in the bin

Gregg is not a chef. He's a former green grocery company owner. He's a broadcaster and a food writer. He's on the show to represent diners.
