Yup I agree that is more likely 2 years progress. All the 1 year progress I have seen, they are already good enough to do basic open chords and chord changes with with it that sounds good.
Maybe it’s because ppl learn faster than others and it could also be how much free time that some people have. I started learning in august and it’s mid February right now and I’d say i’m a little bit of a better player than him. loll but it could just be how long you spend on playing :)
I think most of them are probably real. I play guitar for maybe close to 3 months now and can confidently say im better than him (i know kind of a brag but its not meant to be mean or something. I study everyday for atleast an hour and I dont think ive skipped many days). Im no expert but theres definetely a gap between me and him. It all comes down to how long you practice and how often.

My advice for strumming is that it’s not necessarily from the elbow it’s all in the wrist, move ur wrist instead of ur elbow try that out and you’ll see a huge improvement in technique anyways that’s what I noticed in the video Stick with it!

I'm so confused on when you place your finger on a string does it completely cancel out that string? Probably not but if so what is the point of moving your fingers up and down the different frets?
when you press down on the strings you get different notes. As you go up more frets on the strings(closer to the bigger part of the guitar) you hear higher notes.
I knew very little! I used RUclips videos and just messed around with it myself. You'll find there's a lot you can take in by just going little by little!

I read that rhythm strumming is done from the elbow while the strumming of single few chords should come only from the wrist.

Strumming from the wrist can hurt it, you should only use your wrist for finger picking and your elbow for strumming
