6 slices galangal
3 stalks lemongrass
6 kaffir lime leaves
1/2 cup chopped cilantro
3 green onions
small handful fresh mint
Chopped Thai chilies (to taste)

Oh yummy! I just had Tom Kha coconut chicken soup yesterday at a local Thai restaurant. That's my favorite, but Tom Yum looks so good too. And easy!

So good, I kept everything the beef broth powder the dried and fresh chilies but I swapped the beef with fresh juicy fish.

It was really easy to make and tasted wonderful, but the meat was a bit chewy for my taste. I don’t think chuck roast is a good cut for this method. Next time, I will probably stew the thinly sliced chuck roast with the lemongrass, kefir leaves, and galanga till the meat is tender before adding the rest… thank you for this easy recipe, tasted so good

The fish sauce that she used was made by squid Not fish.
Hi Heidi. If you remove the fish sauce from the recipe you will lose the umami flavor, so when selecting an alternative to fish sauce, you will want to replace with something that will still give you umami flavors. I suggest any of the following, Tamari Soy Sauce, Seaweed, or Oyster Sauce.
Hi CH, it's actually fish sauce from fish, but the brand name is just called Squid Brand... confusing, I know haha. I like Squid Brand fish sauce because it contains only 4 ingredients, anchovy, salt, sugar, and water. No weird stuff or chemicals or anything bad for you.

yes, it's always better to make your own. I didn't have any beef bones to make it, but I typically do try to make my own broth.
