My family has been making raviolis with this exact cheese recipe for generations. Call it what you like but mixed with egg, salt, Romano and parsley and you’ll never eat any other ravioli EVER again. One tip I’d make if it’s possible is to use raw milk directly from the cow. The curds will be much much bigger. If that’s no possible, then add a can of evaporated milk to beef it up a bit.

Only lemon. I might consider getting rennet, only to make a full pot of yoghurt to make into cream cheese for a larger yield. Will think about it. Imo this is better than tofu. Once you've removed as much whey as you can. Use compression to make a flat disc. Make small cubes & boil in slightly salty water and add to your spinach recipe. Or deep fry and use in any broth.

After placing curds into cheese cloth, rinse it in an ice water bath, then squeeze. It cleans it & keeps particles from.sticking to the cloth!

cmiiw, salt will help in curdle the milk. You may need to reduce the amount of vinegar, or the result will be salty and sour.
Or, you can do the suggestion at the end of the video. Put the cheese into food processor and add salt, then blend away.
@@gloriabisco6148 Thanks! I was wondering if my salt hindered it. I want to get a larger yield, but it did work (and lemon). Vinegar was too strong when I used whey in a reduction. I chucked it. Only lemon. I might consider getting rennet, only to make a full pot of yoghurt to make into cream cheese for a larger yield. Will think about it. I put the cheese into homemade milk ice cream to thicken.

Make small cubes & boil in slightly salty water and add to your spinach recipe. Or deep fry and use in any broth.

Cottage cheese differs from paneer in that it is loosely drained- not squeezed or pressed- so it retains some whey and the curds remain loose, and heavy cream is then added to it
