I'm watching these videos and hearing about mystical meats and cheeses I didn't even know existed.
We used to eat pepper and egg sandwiches often. Mostly because Mom could feed three boys for cheap. It was filling and warm in the belly. She'd usually serve fried potatoes or if we were lucky enough to have leftover mashed potatoes, potato pancakes. My favorite. Inexpensive, fast, and easy to prepare.
I do a variation of this, fresh jalapeno and red onion slices in the pan, let the oil and veg heat up then crack a couple of eggs onto it and cover with a lid till the yolks cloud over, processed cheese slice on the bread then slide the eggs onto it, pop the yolks so they don't explode when you bite in.
I've made this a few times, and every time I'm like 'why don't I make this more often?'. Instead of the loaf, I use other options I might have lying around, like a tortilla or roti or a warmed up naan, sometimes with a smoked gouda.
