I’ve seen a lot of ways to make mochi and I’ve also made it before at least 4 times… and I really like this technique.. the only thing i would change is the sweetness because I like it to be a bit sweeter
You can use sweet rice flour or glutinous rice flour, they are the same thing but labelled differently. I don't suggest any other kinds of flour like all purpose flour.
mochiko powder, although they’re technically similar. but its super easy to find glutinous rice flower at a local asian market! (plus it should be very cheap)
it's SO STICKY. idk what I did wrong but it was exhausting to make. and it sticks to everywhere! I haven't tasted it yet and I hope I didn't waste my ingredients :/
I dont know what I did wrong but it never formed fully and most of it got stuck on the counter, never thickened up to hold itself together, and ultimately I ended up eating the sticky slop from my fingers like a pig. It tasted good though.
It has to be made out of sticky (Japanese) rice, that's what makes it glutinous. Otherwise it would just be "rice flour" which is what you're describing.

you should try to pound the mochi a bit more to make it more firm and chewy

Potato starch or you can try to use the same rice flour u used for the mochi
I’d use more Rice Flour. I have a Corn Allergy too, anything corn makes me break out. But I love the Rice flour.😉
