I would say 4” is plenty, if anything it might be a little big. I’d probably be pretty full with a 2” waffle

Looks great! Reminds me of something my wife and I do. We do a Rosemary Asiago Waffle and we steep real maple syrup with a cinnamon stick and serrano peppers. Love it.

@@sethgaston845 We love it. I also brine the chicken overnight. My wife doesn't like dark meat (I know, almost a deal breaker) so I make sure to brine it and make sure I add spices to the flour to layer more flavor. Really making want some, I think I know what we'll be eating this weekend...
This was incredible, thanks Sam! The smoked cheddar in the waffles and the habanero honey were excellent! We had family visit this weekend and we made so many of your recipes and every one was a hit! We had the flaky biscuit egg bake, jerk chicken on the grill and the grilled veggies yesterday. Today we had this one for brunch on Fathers Day and everyone loved it! Happy Fathers Day to you too!

I don't know if it was the angle of the camera but the chicken portion on the left looked raw in the middle after Sam cut it in half. I'm a chef/cook myself and there's no shame in using thermometers to check internal temperatures in meats and specially poultry.
There was also a weird cut there. I imagine he spit it out

I would have put some corn or potato starch in with the AP flour when coating the chicken. 50/50 to get that super crunch.

I should think a drizzle of chili crisp oil would be a good stand-in for the habenero syrup. Wouldn't be exactly the same, but I think it'd be good here, too.

There use to be a restaurant in Brooklyn that did a spicy General Tso's meets Nashville hot chicken on a cornbread waffle. Just throwing ideas out there
Should try making Halal cart chicken and rice with red and white sauce.
Good lord, C&W is one of the all time greats!
If you haven't tried this, make your waffle batter the same except. Separate the yolks and mix those in. Then whip the egg whites into firm peaks and fold them into the mixed batter. It makes a world of difference.

Recently moved to the PNW from the south and wouldn’t necessarily call chicken and waffles PNW food, although I think that’s a popular dish everywhere now.
Or to switch it up a bit, instead of the habanero honey, try a bourbon maple syrup. Then again that's what I use when I bake my bacon.
