Thanks for Watching! You can visit my website and learn more about my cookbooks and fiction books plus my masterclass at www.everything-homemade.com
    Brine Recipe:
    4 large onions
    4 garlic bulbs
    2 cups dried dill
    1/2 cup pickling spice
1/2 cup Redmond sea salt or 1/4 cup pickling salt
    Apple Cider Vinegar
Rough chop the onions and garlic and place it in a glass gallon jar. Then add in the dill, pickling spice and salt. Remember you can add in any other flavoring into the brine too like hot chilies etc. Fill with jar full with apple cider vinegar. Place a lid on the jar and put it in the fridge for a month before using.
For each jar use 1 cup of dried veggies and add in 1 cup of brine with 2 cups of water to a 1 quart canning jar. Place the lid on the canning jar and put it in the fridge for 24 hours. After 24 hours, enjoy your cold canned goods!

Thank you for this video/Idea Mrs. Rita !!!!
My wife studies and utilizes your Stevia book all the time. Reads it in bed even. She tells me uts THE best thing I've ever gotten her. 😊. I'm usually the one who cans everything each season, she freezes.
I'm definitely going to try cold canning this time.
    Thank you. Dave

@@EverythingHomemadewithRita Tennessee. We had such a hot spring again this year, that I only planted corn. Guess fall gardening has become the norm now. We loved seeing your excitement in this vid.

Do you freeze dry or dehydrate the veggies?

I dehydrate them because I don't have a freeze dryer but you can use either way.

Thank you ! How many times can you keep opening the jar of veges for small amounts before it goes off ? And I assume they're kept in the fridge ? And , what method of drying veges would you recommend ,please ? Cheers .

How to hydrate dried veggies. this is not canning. good idea but misleading. Too salty for me. Darn. I prefer naturally fermented veggies anyway.

So you dehydrate or freeze dry your veggies. We have been doing those methods for decades. No reason to cold canon. Just a waste of time and energy. So now you are fermenting basically. Nope.
