Then add in the dill, pickling spice and salt. Remember you can add in any other flavoring into the brine too like hot chilies etc. Fill with jar full with apple cider vinegar. Place a lid on the jar and put it in the fridge for a month before using. For each jar use 1 cup of dried veggies and add in 1 cup of brine with 2 cups of water to a 1 quart canning jar. Place the lid on the canning jar and put it in the fridge for 24 hours. After 24 hours, enjoy your cold canned goods!

Thank you ! How many times can you keep opening the jar of veges for small amounts before it goes off ? And I assume they're kept in the fridge ? And , what method of drying veges would you recommend ,please ? Cheers .
So you dehydrate or freeze dry your veggies. We have been doing those methods for decades. No reason to cold canon. Just a waste of time and energy. So now you are fermenting basically. Nope.

I dehydrate them because I don't have a freeze dryer but you can use either way.

Yes, they are kept in the fridge. They last a month easy in the fridge!
How to hydrate dried veggies. this is not canning. good idea but misleading. Too salty for me. Darn. I prefer naturally fermented veggies anyway.
