I grew up in France (Annecy city) when i was a student i used to work in a crêperie. We do add baking powder (Alsa levure chimique) and corn starch (Maizena) to make it lighter, certain packaging of Alsa, you can read a crepe recipe including baking powder.
Adding yeast instead of backing powder is much better and it gives the crepe more beautiful color .. and the original french crepe is without lemon I think lemon is an American add
In my country Slovenia, pancakes are so much easier to make. No baking powder, no butter... just flour, eggs, a pinch of sugar and salt, we add 3/4 of milk and 1/4 of sparkling water, to be light and mix. Are perfect.
As an authentic french dude (actually living in France), most of us don't use "baking powder" in the original recipe, I know it does exist but the majority of us don't use it. But the most important ingredient to not forget : BUTTER which is the secret ingredient for most of the french recipes ! 😅 You can replace also the refined white sugar with "cassonade" which is natural cane brown sugar (it's even better). Of couse if you can put the content of a natural vanilla pod (just the tiny black grains inside), it will be insanely good ! Finally some of us french are adding just a tiny bit of rum (just the equivalent of a table spoon, no more, but you can do without also). And please for god sake do not grease the pan with oil ! A real french man will use butter (but be careful because butter is burning if there's too much heat) ! here's the recipe of one of our great Chef : Philippe Etchebest "Meilleur ouvrier de France" (which is a title reserved to our VERY BEST ONLY) Sorry but we're using the metric system 😅 : So for 4 to 6 persons : 40 g de beurre (butter) 4 oeufs (eggs) 250 g de farine (flour) 40 g de sucre en poudre (sugar) 60 cl de lait (milk) 1 cuil. à soupe d’eau de fleur d’oranger ou de rhum, Grand Marnier … (1 table spoon of Orange blossom extract, Rum or grand marnier, your choice) => this one is optional.

Turn the heat on the highest. Throw wet ingredients in a shaker. Shake for a 10 seconds Throw in half of the flour. Shake for 15 seconds. Throw in the other half. Shake for 15 seconds. Fry. Use more salt. Use any kind of fat or oil you want. Fastest/easiest crepes.

I so agree! My aunt from Paris would never put lemon or baking powder into her crepes. And instead of regular sugar one uses powered sugar. The crepes need to be thinner. For that one uses a special wooden crepes batter spreader. Her tip: you can read a newspaper through your crepe😊

The only secret is : preheat your frying pan as you cooking the dough, it has to be very hot (7.5, 8 / 10), once it's ok spread BUTTER nut to cook your crepes gorgeously colored and tasty. 250g flour 4 eggs 1/2 liter of milk And that's it ! Vanilla is optional... Our grandmothers used to add some Fleur d'Oranger. If you add these reserve dough for almost an hour to give flavours the time to diffuse. Made crepes and ate them as one of my favorite food. Being a French Canadian this could be not just breakfast but supper, with Canadian cheese, or molasses. At that time nobody paid attention, and being part of a family of 8 children, was a very economical supper. Now 84, and still relish them.

I once spent about a week in Paris on business when I was in my 20's and I ate nearly every meal from the street carts serving crepes even though I was on an expense account at the time and could have eaten pretty much anything. It's strangely the first experience I ever had with Nutella... a Nutella and banana crepe was my go to. After I got back to the states I found Nutella in the stores but it was the trip to Paris that introduced me 🙂

I love crepes, especially lemon/sugar ones where you sprinkle each crepe with a bit of lemon juice then a little sugar and fold. The tart lemon juice & sugar make a really nice breakfast, lunch or dessert for dinner. Yum. I’ve never added baking soda to my recipe but will give this a try. Pace of the vid is perfect. Some others take way too long by showing just about every second of putting it together, which is unnecessary. Or it’s way too fast and you can’t jot things down. I’ll look forward to others!😊

100% French here and even more from Brittany where the crêpes are from : never heard of baking powder in the recipe but some of us put a glass of beer in the batter for the yeast and the acidity which helps a lot with the flour so baking soda and lemon make sens but are not used here

I made it today. It was quite nice and easy to make. Also guys, if you see lumps in your mixture, just keep whisking a bit, they'll disappear. No need for an immersion blender.

My French grandma added a bit of bier to have them light and soft... never backing powder. Everything at room temperature and let rest for at least an hour on the kitchen bench. Enjoy!

French here, never heard of using baking powder too. I tried with or without butter/oil in the dough and you can't really taste the difference so no added fat is required. What makes a big difference in taste is adding dark rum! (Negrita is perfect for this). There's millions of variations to make crêpes ;)

My grandmother would turn in her grave. No baking powder, definitely no lemon, and too much butter. Use powdered sugar, or at least castor sugar. Batter looks a bit thick, and should be rested for an hour before cooking. Add lemon juide later to cooked crepes if desired

I’m in Canada, but my wife grew up in the UK. Her recipe for "English" pancakes, that she remembers from childhood, is very similar. No baking powder. After cooking each pancake is rolled up with sugar & lots of lemon inside. I decorate with fruit & icing sugar.

Watching from Mathura, UP, India. Here we make crepes out of 1:1 Gram flour and whole wheat flour, salt, water and a little bit of oil for cooking. That's called Cheela. They can also be sweetened by altering salt by sugar(or any sweetener you wanna use).

Better use just 400ml milk and instead of baking soda=chimichanga add 100 ml beer and less sugar and butter. Yummy!

Yes I concur that using beer is the best. The crepe is light as a feather> Let the mixture rest 4 at least 4hr - overnite if u wish.

100% French here and even more from Brittany where the crêpes are from : never heard of baking powder in the recipe but some of us put a glass of beer in the batter for the yeast and the acidity which helps a lot with the flour so baking soda and lemon make sens but are not used here

I made it today. It was quite nice and easy to make. Also guys, if you see lumps in your mixture, just keep whisking a bit, they'll disappear. No need for an immersion blender.

My French grandma added a bit of bier to have them light and soft... never backing powder. Everything at room temperature and let rest for at least an hour on the kitchen bench.

Being french and cooking crepes quite often, I can tell you that there is no baking powder in the batter, your recipe is the American version of our french crepes, this is kind of weird, but I will give it a try ! 😊

No American would add baking soda to crepes either, unless they were following the recipe of someone who has no idea of what they are doing.

French here, never heard of using baking powder too. I tried with or without butter/oil in the dough and you can't really taste the difference so no added fat is required. What makes a big difference in taste is adding dark rum! (Negrita is perfect for this). There's millions of variations to make crêpes ;)

My grandmother would turn in her grave. No baking powder, definitely no lemon, and too much butter. Use powdered sugar, or at least castor sugar. Batter looks a bit thick, and should be rested for an hour before cooking.

Yes, but... the secret to *really* good crêpes is taking part in the Paris-Brest-Paris cycling event and eating them at the roadside from a stand that villagers have set up with a sign reading "Crêpes 2€50, free for PBP riders". Believe me, they're the best.

I’m in Canada, but my wife grew up in the UK. Her recipe for "English" pancakes, that she remembers from childhood, is very similar. No baking powder. After cooking each pancake is rolled up with sugar & lots of lemon inside. I decorate with fruit & icing sugar.

Watching from Mathura, UP, India. Here we make crepes out of 1:1 Gram flour and whole wheat flour, salt, water and a little bit of oil for cooking. That's called Cheela. They can also be sweetened by altering salt by sugar(or any sweetener you wanna use).

excellent recipe Thank you❤, these are really the proportions that I use regularly for my frensh pancakes and the baking powder makes them light and unsurprisingly it gives soft pancakes and I enjoy it every time.
PS: the only thing different is that I don't use lemon👍🥀
