I wouldn't leave the olives whole. I'd chop them finely and mix it into the sauce. I would swap the cheese tubes for something better like samboy salt and vinager.
I often make a meal from left overs in the fridge. Sometimes one can come up with something really unique and also tasty. Your creation looked absolutely delicious.

FYI Putting bread in the fridge actually makes it go stale quicker than just leaving out on the bench, but freezing works well.
