The whole argument that Luke's last name was a dead giveaway, especially because he was on Tatooine, ignores the fact that there were obviously already "Skywalkers" on Tatooine before Anakin. Shmi had the Skywalker name and never married, so logically her parents (or at least father) were of the same name. Even though we don't see them, there had to have been a lineage on that planet. And in terms of the locals connecting Anakin to Luke, Anakin left Tatooine 20+ years before Luke showed up (except for one day when all he did was interact with Owen/Beru and Watto). Sure, he was probably famous for a bit for the podracing win, but then he was gone. It probably wasn't that hard to give Luke a plausible backstory to the name if there were other Skywalkers elsewhere on the planet, or at least people alive who remembered some. Leia, on the other hand, would have had to have a name change. A "Skywalker" showing up on Alderaan as the adopted daughter of a powerful senator who had multiple interactions with Anakin and Padme? That would have been much more unexplainable and more highly scrutinized, IMO.
Palpatine probably felt a similar feeling in the force with luke that he did with Anakin so he knew the similarities led to knowing they had to be family

I always thought it was strange that Leia was adopted by the Organas and give the name Organa but Luke is raised by Owen and Beru Lars but keeps the name Skywalker. Would it not have been dangerous for him to have the name Skywalker. The same last name as the famed Republic General Anakin Skywalker. Now granted being on Tatooine granted him a lot more anonymity than Leia being a prestigious senator's daughter on Alderaan and of course Darth Vaders reluctance to ever set foot on Tatooine again would make it unlikely he would ever go there but still who knows what spies the Emperor had all over the galaxy.

There is a much simpler way that the Emperor could have learned Luke was Vaders son. The Emperor knew that Vader's real name was Anakin Skywalker and he found out the name of the main character was Luke Skywalker. He knew that Anakin and Padema were getting very friendly and he put two and two together. On the other hand when the first Death Star was destroyed, the emperor used the force to try to figure out who did it and put two and two together that way.

At least in Legends, in the old Dark Horse comics, Beru says that they named him Skywalker to honor the memory of Shmi
