  • Tried your hand at our rice cake recipe? Watch our soigneurs make these tasty treats and pick up some of their pro technique.
    INGREDIENTS:
    4 cups tap water
    2 ¼ cups white short grain rice
    2 ½ cups full fat cream cheese
    2 Tablespoons granulated white sugar
    2 Tablespoons melted coconut oil
    1 teaspoon vanilla extract

    People asking about consistency on longer rides etc.
    my tip is to roll each one in desiccated coconut after cutting. It will give it a dry outer layer that sticks less and makes them easy to handle even when they’re warm.
    Other tip is to add salt or electrolyte powder mix if you need more of that on your rides too

      Good tip. I made for the first time yesterday. Were a little sticky on the paper when I got out of my pocket on todays ride. Coconut should fix that up.

      Jaidyn Willis I could see a small type of grain like millet or course ground oats or something like that.

      @@jaidynwillis7743 Everyone tastes and dietary requirements are different of course. I make something similar with no coconut. I slice them in half and apply a thin lay of peanut butter to one side and raspberry jam to the other, then reassemble and wrap the same. It also depends on you and your level of riding, there are so many variables.

    I've this a lot of times, but they don't get firm the whole ride, is there any trick to make it firm like a normal bar?

    The sugar quantities don’t jive. Caption says 2TB, video says 8TB (2x4). So which is it? 2TB or 4TB for one batch? Thanks!

      I think the caption is for a regular batch while the video they're making a double batch.

    How have people gone with freezing these? Still stay together after they have dethawed during the ride?

      Yes, i always make a huge batch and then freeze them. They are the same afterwards.

    If frozen, are they fine to put straight into jersey pockets to defrost while riding? Or do you have an alternate recommendation?

      Have done this and i cools you down well on hot days! Although they are not so tasty when not thawed completely.

    If I wanted to pack these out on a long ride, or for a long distance race, how long would they be safe out of the fridge? I want to make them but I’d be carrying them in my jersey or bento box for a few hours, is that ok?

    How long are these good out of the fridge? I'd imagine they would be ok for a few hours for a day ride or whatever, but what about taking them along on a camping trip? Need to keep them cool until ready to eat? Can they be packed in a regular bag and eaten over, say, a weekend without refrigeration if properly stored?

      There’s no dairy, if you were sanitary with packaging you should be fine.

    nutritional value? tried to calculate it. or it sucks as cycling fuel, or my calculation is wrong. I guess the latter, so please share what you guys think the nutritional value per 100 gr is :)

      It's quick carbohydrates. Good for fast fuel.

      @@martins3993 I find it rather difficult actually. There's the other type of rice cakes that gets all the results. Those light cracker types. I calculate all my types of fuel so I know exactly what to take with me. I have a killer flapjack recipe of which I know exactly how much carbs it packs per 100g. Can you find a link for these types of rice cakes?

      You don't want to wash off the starch that will help stick the rice together.

    How long can these stay out? Like how long do they last on a ride, do they melt or something?

      with good air condition and heat, probably 3 hours or more, with heat and sun I think that 2 hours or less

      I calculated it. 200 kcal per square and 20g of carbs. That's a baseline; certainly more if you add maple syrup or fruit or whatever.

    Is it possible to just substitute the amount of creamed coconut with additonal water or will they then not keep the shape after cooling?

    What a waste of plastic by using the ziplock bag only once. Use a sheet pan . It is a shame !

      Martin Azevedo it’s less waste than individual gu packets. I’m sure you could figure out a way to do it with parchment paper.

      I've made these is a casserole dish and its worked out great they probably use ziplock bags because it takes up less space on the team bus.

      @@davidbarrett4586 I bet it's less waste than a ship full of oil sinking in the Mediterranean, my questions is: is there any other way to do it? Using a reusable container maybe? I think it's totally possible =)
