    It's weird how unappreciated these chefs can be. I just have mad respect for them and I'll definitely try making those rice cakes.

    Divide everything by about eight, so that's:
    125g rice
    125ml apple juice
    125 - 250 ml water
    Some coconut milk... Depends on the size of the tin you get, and adjust the amount of water you add to suit this too.

    You're right, it is paper back foil, loads of pro team soigneurs use it, but I think that it's mostly sold in Europe. Never seen it in the UK at least!

    Tried this just yesterday, great recipe.
    Pro tip: try glutinous rice. You'll have to boil it in water or broth for a loooooong time, but it'll have a nougat-y consistency when cooked as opposed to grainy like steamed rice. No need to freeze :) slice into bars, wrap each bar separately in Japanese paper lined with roasted flour to keep the bar from sticking to the paper, and you're done.
    Source: I'm Filipino and I've cooked and eaten rice meals all my life.

    I just made this recipe and it's awesome! Cooled it overnight and this morning I took a piece with me on a quick 60k spin just so I could try it out and it was great! Had another small slice with tea for a snack when I got in! Will definitely make it again, but next time I think I will swap the dried fruit for something savoury... maybe bacon;) Thanks GCN!

    Yes, but not all fat is bad fat. Current thinking, within pro cycling at least, is that coconut fat is really beneficial.

    There is a very short shelf life on rice cakes because of this. It's also worth thinking about how on earth you'll keep them cool on a hot day in your back pocket.

    Brown rice is lower GI, but white rice is quite high GI. It's very high in starch, which does need to be broken down into simple sugars by your digestive system, but this is no bad thing. If you need an instant glucose hit, eat sweets or a down a gel.

    I made these today! I have a 50 mile ride tomorrow with 25 miles of straight climbing. I am bringing rice cakes, pb&j with Nutella, and block shots. It's going to be a feast on wheels ;)

    Sweet rice also called mochi rice is sticky when cooked and will hold together better than regular rice. This is what I use.

    Great tip. I use Japanese "Sticky" rice and when cooked, it's already sticky and holds together well. Will try these ingredients though. Thanks

    I used arborio rice and may have overlooked it. They were pretty gelatinous. Will try a medium grain rice next and cook it just to the point of tenderness.

    How long do these keep- would they go off during a 4h ride for example?

      Richard Noble they wouldn't go off during a four hour ride but we'd recommend using fresh rice cakes rather than day or two day old ones.

    How long is "really short shelf life outside the fridge"? I don't want to pocket some on a hot ride for a few hours only to find my food has gone bad. I do want to give these a try though!

    I made this yesterday.. like others have mentioned, I made it nice and sticky with the same consistency as the video and it wouldn't set! I'm throwing it in the bin now - will try again, being sure to keep it much drier; not like wet porridge.

    This is really a carbohydrate bomb. Though rice is very popular food in Japan, this is first time seeing boiling with sugar, coconuts milk and apple juice. I'll try it.

    Great video, Hannah. Thanks for a great recipe/recipes once again, its motivated me to them out and to train hard/smarter. I would add 4/5 can of Mighty Malt/1 litre Carrot juice, instead of 1 Apple juice because you already added Dried Apple Slices. Some Sultanas, black corridors pepper, 2 cans rice milk, with same stuff you've but depending circuit, road time trial or high hill climbs which cyclist are going to need the best nutrition to get form of energy.

    Made a batch of these rice cakes recently, about half the amounts used in this video resulted in 24 bars at just over 100 g each. When freshly made these bars were fabulous but after storing them in the freezer they've become a tad dry. As I'd read about people having trouble getting their cakes to settle I might've cooked the rice porridge too thick, so shall try leaving it a little runnier next time which will hopefully correct the dryness.

    How long will these last in your backpocket during a ride before melting and leaking? Or, are they meant to be eaten pre-ride right after taking them out of the fridge?

      They hand the riders a bag as they are riding, probably straight from the fridge. Buy they shoukd keep for an hour I woukd guess, provided its not boiling hot out

      Ummm... we're not sure *****. The pro team soigneurs tend to use a paper-backed foil that we've only seen in Europe.

    If you add Coconut milk, you've made Biko, a filipino food. Try it next time. Though traditional biko wouldn't have dried fruits in it.

    Can you use brown rice or will it not be sticky enough to form bars? Currently in the middle of making these with brown rice but I'm scared they wont work.

      Joshua Cole not tried brown rice, but I think that sticky rice is important to hold it all together.

      It's true. Brown rice didn't work well at all. Short grain white rice turned out well.

    It may be a silly question but what size of pot are you using to make 1KG of rice cake How many liters does it hold I have got a pot looks big enought but the rice swells up making it difficult to add the rest of the ingrediants with out spilling over the side.

      Hey Ryan, the advantage is really flavour, for those people that have been riding for so long they are sick of energy bars, gels and drinks. The nutritional profile of the rice cakes is no better than an energy bar.

    pershazelgrove, I think rice is to 'fill' your stomach. For energy and nutrients, you have the electrolytes in water, energy gels and bars. Rice keeps you from having an empty stomach
