Nearly every team now travels to the Tour de France with a team chef, and every day the chef makes batch of rice cakes for the riders. When we spent the day with Hannah Grant (@dailystews on Twitter) we learned how to make the rice cakes that fuelled Alberto Contador and Roman Kreuziger to 4th and 5th at the 2013 Tour.
It's probably easiest to cook along with Hannah and adjust your ingredients as you go as Hannah is cooking for 8 hungry pro cyclists. But, for starters, here are the ingredients that she uses:
All measures are approximate, and to feed 8.
Short Grain Rice - 1kg
Coconut Milk - 2 tins
Apple Juice - 1 litre
Water - 1 - 2 litres (approx)
Golden Raisins, Dried Apple Slices, Brown Sugar and Cinnamon to taste.
CAUTION - Rice cakes have a particularly short shelf life.
Huge thanks to Hannah - give her a follow on Twitter @dailystews

Damn GCN. Mad respect for the time you guys take with editing, music, and camera angles. Truly appreciate it.
Thanks Philip Han!
very true being into photo, video and now cycling as well one of the many things I love about these guys is the video quality. So much work.
they even put a gopro on her spoon when she was folding in the mixture. #dedication
Yeah but was that dizzying! Great video and want some "apple pie rice cakes" for desert since I just finished lunch....
It's weird how unappreciated these chefs can be. I just have mad respect for them and I'll definitely try making those rice cakes.
Divide everything by about eight, so that's:
125g rice
125ml apple juice
125 - 250 ml water
Some coconut milk... Depends on the size of the tin you get, and adjust the amount of water you add to suit this too.
Tried this just yesterday, great recipe.
Pro tip: try glutinous rice. You'll have to boil it in water or broth for a loooooong time, but it'll have a nougat-y consistency when cooked as opposed to grainy like steamed rice. No need to freeze :) slice into bars, wrap each bar separately in Japanese paper lined with roasted flour to keep the bar from sticking to the paper, and you're done.

Hannah you should have your own channel!!! Good stuff, nice narration aswell!
Buy her book. It's on the wall. "The Grand Tour Cookbook."
I've done it for eating in my rides.
My family eated all in the first day. Awsome !!!
We have a 'GCN's Cycling Nutrition Playlist'. I'm afraid it's not all Hannah - GCN Masterchef Simon Richardson makes an appearance too.
Hannah Rocks! We want more Hannah, More Hannah, More Hannah :-)
Spoon cam made me dizzy xD
Definitely going to fuel my summer riding spree with these. Cheers Hannah!
More videos with Hannah please.
You're right, it is paper back foil, loads of pro team soigneurs use it, but I think that it's mostly sold in Europe. Never seen it in the UK at least!
I just made this recipe and it's awesome! Cooled it overnight and this morning I took a piece with me on a quick 60k spin just so I could try it out and it was great! Had another small slice with tea for a snack when I got in! Will definitely make it again, but next time I think I will swap the dried fruit for something savoury... maybe bacon;) Thanks GCN!
Bacon ,egg rice cake lol😮. I mean just thin slices for flavor .not crazy big bits 😢
Those GoPro angles were brilliant
Great tip. I use Japanese "Sticky" rice and when cooked, it's already sticky and holds together well. Will try these ingredients though. Thanks
Yes, but not all fat is bad fat. Current thinking, within pro cycling at least, is that coconut fat is really beneficial.
Is it possible to put them in the oven for 20minutes to have it more dry like a cracker?
What ever happened to Hannah GCN? We need more of these :D
Webgkil I
I used arborio rice and may have overlooked it. They were pretty gelatinous. Will try a medium grain rice next and cook it just to the point of tenderness.
I injured my back, which is obvs bad, but the upside is I'm getting to spend some time on cooking. I'm finally trying new recipes and this is the first one I'm trying. Thanks, GCN!
It's not out in English yet, but should be being published soon. We can't wait to get hold of it!
i want that go pro spatula
Thank you for this amazing recipe. It looks very beautiful! Please make more videos with recipes for long bike rides. Amazing channel!
GoPro on the spoon, I love it!
I love these episodes. Nutrition is one of my favourite aspects of cycling and these recipes look great! Cheers for yet again another fantastic video :)
Brown rice is lower GI, but white rice is quite high GI. It's very high in starch, which does need to be broken down into simple sugars by your digestive system, but this is no bad thing. If you need an instant glucose hit, eat sweets or a down a gel.
Sweet rice also called mochi rice is sticky when cooked and will hold together better than regular rice. This is what I use.
Not sure if anyone will read this comment, but can we have an estimation of the carbs/100g?
Great recipe BTW, I really enjoyed it!
Hannah!!! She has the best accent and love her cooking. Yummy & healthy stuff!
Hannah is amazing, she should have a cook show!
You should do more videos with her, very approachable and warm.
It can indeed!
Awesome I am so going to make this tomorrow
just bought her new cookbook. Great recipes for "performance food" a really nice, overall quality book (paper & pic's)
such a good channel, i learn something new everyday. Thank you!!
I made this yesterday.. like others have mentioned, I made it nice and sticky with the same consistency as the video and it wouldn't set! I'm throwing it in the bin now - will try again, being sure to keep it much drier; not like wet porridge.
Nice 👍
I will try this ,
With rice 🍚 and dates , apples ,
Can we just take a second to appreciate those sunglasses? It's like a 70's flashback.
Regular milk, soya milk or rice milk would all work.
You should do more videos with her
I enjoy them. Also the GoPro on the spoon was a nice touch :]
Here in our Philippines,,, it is called biko or sinukmani in our province...its a delicious delicacy
Hi Guy, the written recipe is in the description :-)
Instantly recognized the danish accent :)
great vid btw.
where did she grew up in? love the accent.
odi97thegreat Hannah Grant is Danish. :)
Can we get some more videos of recipes GCN? love these!
I made these today! I have a 50 mile ride tomorrow with 25 miles of straight climbing. I am bringing rice cakes, pb&j with Nutella, and block shots. It's going to be a feast on wheels ;)
How was that ride mate?
Great videos, cant get enough of them at the moment!
These look good. I have been using the recipe from the feed zone book for bacon and egg rice cakes, but I want to try these.
Thank you GCN that you took on my request!
How long is "really short shelf life outside the fridge"? I don't want to pocket some on a hot ride for a few hours only to find my food has gone bad. I do want to give these a try though!
I cannot believe you actually made this video...GCN I love you!
Most excellent work.
This is really a carbohydrate bomb. Though rice is very popular food in Japan, this is first time seeing boiling with sugar, coconuts milk and apple juice. I'll try it.
Can normal milk replace this coconut milk?
Just made the rice cakes. Yum. Looking forward to eating some out on my next ride... And when I get back... And after dinner. Thanks +Global Cycling Network
I love the Spoon Cam!!! You guys rock it out every time!!! And I'm in love with her accent, too, btw. I'm American, I dig accents.
YES SHE'S BACK! Thank you GCN. She's a really interesting person.
Weird to see a cooking video on GCN though.
I love the spoon camara
How long do these keep- would they go off during a 4h ride for example?
Richard Noble they wouldn't go off during a four hour ride but we'd recommend using fresh rice cakes rather than day or two day old ones.
Would like to see more videos like this :)
If you add Coconut milk, you've made Biko, a filipino food. Try it next time. Though traditional biko wouldn't have dried fruits in it.
Great recipe! No more powerbars. This are my new tanks of energy for my rides. Kudos!
Made a batch of these rice cakes recently, about half the amounts used in this video resulted in 24 bars at just over 100 g each. When freshly made these bars were fabulous but after storing them in the freezer they've become a tad dry. As I'd read about people having trouble getting their cakes to settle I might've cooked the rice porridge too thick, so shall try leaving it a little runnier next time which will hopefully correct the dryness.
Magnus Helin if you're looking for a bar that stores well (or at least better than the rice cakes) check out our 'Über Bar' recipe: How To Make Energy Bars - GCN's Food For Cycling
Yes, I've stocked up on the ingredients for the Über bars but not had the time to cook up a batch yet!
JUST made iT to! Loved iT!
I would like a detailed explanation on how to package for the back of your jersey
Thanks for this
Great video, Hannah. Thanks for a great recipe/recipes once again, its motivated me to them out and to train hard/smarter. I would add 4/5 can of Mighty Malt/1 litre Carrot juice, instead of 1 Apple juice because you already added Dried Apple Slices. Some Sultanas, black corridors pepper, 2 cans rice milk, with same stuff you've but depending circuit, road time trial or high hill climbs which cyclist are going to need the best nutrition to get form of energy.
Would cooking time be less if the rice were pre soaked several hours prior. Would pre soak affect the consistency of the finished product??
Hannah is the best!!!
There is a very short shelf life on rice cakes because of this. It's also worth thinking about how on earth you'll keep them cool on a hot day in your back pocket.
Is there a reason you add the cinnamon afterwards and not simply right after cooking like the fruits etc.?
Can you please let me know where to buy paper to envelop the rice cake or bars? It’s not easy to find a brand and a shop in Europe that sell it. Please let me know. Best regards and congratulations for the channel
That looked delicious and delicious and delicious and yummy
Can we use integral rice?
Thank you
Yet another amazing video GCN, Do you have any idea how many calories are in each piece?
so could you theoretically bake these? if not, any suggestions on how to make your own sweet flavoured rice cakes instead of buying?? many thanks, xxA
And what about using natural honey instead of the brown sugar? is there any problem on that?....
It's acidic and causes inflammation
Thanks! this is really useful!
Can you use brown rice?
I love the danish accent
I love the way she said "Firm rice cake"
any similar recipes without coconuts involved?
You could probably use oat milk or other milk substitute
How much is 2 tins in liter?
Well apart from the last month, in Britain there is not too much worry about hot temperatures :)... are there going to be more recipies for things like this in the future? :)
She reminds me of Elon Musk for some reason
OMG spot on couldnt think of the person..
Same accent - despite the fact that he’s South African/American and she’s...Belgian...?
@@joachimmacdonald2702 she is Danish in fact
cosenal ah, that makes sense
@@joachimmacdonald2702 she is much nicer looking.
What exactly do you mean by vert short self life? Still good at the end of six hour ride, or even shorter?
Does any one know if adding a rice flour or corn flour slurry will help set the bars even further?
It may be a silly question but what size of pot are you using to make 1KG of rice cake How many liters does it hold I have got a pot looks big enought but the rice swells up making it difficult to add the rest of the ingrediants with out spilling over the side.
Mine kind of fell apart. Any tips on how to make them stay in tact?
I thought rice was low GI so how come they use them during a ride as it will take ages to transfer into energy
Thank you :)
2/2 recipes I've seen from GCN that are vegan. You rock!
+Windom Morris You missed the Omelette and Dan's chorizo
+Simon Rano yeah maybe those videos exist but I won't watch them and animal products are shit for athletes so the jokes really on you.
Windom Morris
Sure. I have real question for vegan people. As honey, egg or dairy are considered as animal products and exploitation, how is your concerns about vegetables or cereal cultivated by exploited humans ?
+Simon Rano I feel like this should be obvious but since you're asking- Vegans are against the exploitation of all sentient beings, including human workers. However you cannot bring up vegetables and cereals without bringing up all the other aspects of food processing (including animal products) in which there might be exploited humans. Vegans will never try to tell you that we live in a perfect world but we are trying to eliminate exploitation in all aspects of our lives. If there's a way we can address this desire better- please let me know because that's a really considerate thing to point out.
I see. I avoid meat as often as I can. Only exeptions are when i'm dinning with friends because I don't want to be that guy that decide the meal.Meat from time to time is no big deal for me.
I cut meat for two reasons : first I think eating meat every day is bad for health and second meat production fuck up the environment more than cereal or vegs.
But I do not really focus on animals or human condition. Because of human nature you can't know if the product you purchase is really Fair-Trade or Organic and I can't afford trustable products. I also think that animals should be farmed in good conditions and much lower quantity. Some (small) farmers car a lot about their animals and treat them the best they can
Can you use brown rice or will it not be sticky enough to form bars? Currently in the middle of making these with brown rice but I'm scared they wont work.
Joshua Cole not tried brown rice, but I think that sticky rice is important to hold it all together.
It's true. Brown rice didn't work well at all. Short grain white rice turned out well.
Can i use also dried banana slices ?
I am not even remotely interested in cycling, but the cooking videos are great. I would love to see more.
How do I know when it is enough water?
I'm new to cycling and still in the process of mastering my nutritional needs. That being said, what are the advantages of rice cakes? Thanks!
Hey Ryan, the advantage is really flavour, for those people that have been riding for so long they are sick of energy bars, gels and drinks. The nutritional profile of the rice cakes is no better than an energy bar.
Roger that. Thank you very much.
That looks delicious! :) Yum!
Go Pro on a mixing spoon...Awesome
