I'm really surprised I liked deer meat! I guess just apprehensive about trying game meat I guess. But oh man it is so good! My kids eat up anything I make that has venison in it! I'm so thankful for that!

I was gonna fix spaghetti and meatballs today, but it's staying incredibly hot and humid where I am here in SW Ohio. We still have some power outages from days ago but not me, thank God. I just don't want to turn on the stove and am using the slow cooker and microwave, supposed to cool off a bit by the weekend.

Ya'lls kids are so cute!!! And you being able to cook so many different meals and can food I envy you, I do most of the cooking and I don't have a pantry like yours we don't have the room, but it's a struggle for me but you have given me some great ideas

Love your videos. I really felt for you mixing all that meat in that packed bowl. I woukd have hadcit all over the counter. I use a dishpan to mix large quantities like that. Sometiimes my roasting pan. Save on the mess.
Follow up… so I guess I got a little impatient and went ahead and Canned some based on things I’ve read. So I let my sauce and my meatballs come to room temperature and I canned them in water that also start it off room temperature. What would go wrong with them? Are they safe to eat?
The reason you can't put breadcrumbs in the meat you are canning is because the crumbs break down into a gooey mess. That makes the viscosity too thick and effects the kill time pressure canning. The heat doesn't get to the center high enough to kill all the bacteria that is lurking in the meat. I would imagine the meat balls would not hold together either.
Oh that makes sense Janet! I'm glad these are able to hold together without needing breadcrumbs. I bet it's the dehydrated onions in it! I was able to save enough money to get a magic mill dehydrator! I'm going to be doing an UN-boxing and going to try my first dehydrated project ever! Any suggestions on what to make first? Jerky is on my list, but don't know if I should start with that. I also got sheets so I can try fruit roll ups!

If you have a kitchen aid mixer you can mix the meat with a flat beater and avoid the mess of mixing with your hands.

I believe it has to be at least 5% acidity to work. Canning salt is great to use. Any salt but iodized is recommended.

Could the meat be mixed with your mixer?
Yes it could! I didn't know about that trick when I did this! That would have been way better!
