David... For the meatball sliders you can change the time for cooking the meat and use other type of cheese. The idea is still great but cheddar doesn't always work.

The burger one probably didnt taste as good because of the second bake. You could just shorten the time on the first run through the oven, then bake with dinner rolls for a bit less time as well
when you are going to boil the chicken, i recomend just sealing the meat with a little bit of oil, that way you end up with a delicious chicken stock and a boiled chicken breast
Fun fact: if you put chunks of chicken breast in a stand mixer and beat them on low to medium speed with the regular paddle attachment it perfectly shreds the chicken in half the time. Yeah, I know blew my mind when I tried it too. Lol
