Hey bud you dont need to perfectly pick your cilantro. Small stems of herbs wont hurt you, especially cause ur chopping it up anyway.
Also for like. Cutting stuff just make sure your fingertips are out of the way and if your cutting something round make sure to cut a flat surface on it (cutting it in half usually) and then cut it with the flat part on the bottom.

When boiling chicken for tacos I allllwwaayysss season the water. Then when you throw it back it the pan you can use the seasoned chicken water to deglaze the pan. Sooooo gooood
