    I have only made three comments on RUclips channels over the years and here is the 2nd on this on this channel. OMG!!!! Made this tonight and words cannot convey how amazing this is!!! WOW!!! I did this primarily for burgers but now I can't wait to try it over a grilled ribeye and beef skewers! Will this work on grilled hot dogs and grilled BBQ chicken? Holy crud, can't wait to see what all this will go with! Thanks again for an awesome recipe and remember that even if you don't drink you should try it!!! My wife said cheers to the chef (obviously you)!

      Just saw this video for the first time and had to make it strait away I didn’t have any bacon so I used a big chunk of chorizo instead and my god it worked a treat will definitely be making it again 👍

    You have changed my life at 64 yrs old. Who would believe. I made chicken soup today. Onyo first. What a difference. It was just perfect. I also made chicken salad because the chicken was cooked just right and not overdone. All thanx to your wonderful trainin. I can’t thank you enough.

    A local restaurant makes their own bacon onion jam as a burger topping. It is so very delicious. I have extreme high hopes for this recipe.

    Chef Jean-Pierre, j'ai 58 ans et n'est jamais vraiment fait la cuisine auparavant. Tes videos sont clairs, instructifs et tres 'entertaining'. Bravo! et merci. A mon humble avis, la meilleur facon d'aprendre est d'avoir un chef qui nous montre comment NOUS pouvons faire et non pas ce qu'IL peut faire, comme tu l'as d'ailleurs toi meme dis...     My fridge freezer is 1/4 full or caramelized onyo, now another 1/4 will be filled with onyo jam!! I hope you know how much joy you bring in this downer year... you brighten many lives!

    I've only been watching Chef JP for a week and have already made 3 of his recipes. I made the quick beef stock and was feeling reluctant to use the tomato puree and tomato paste. I decided to go with the tomato products and my goodness it's delicious! I also made the quick chicken stock, delicious. You probably can guess why I did this. I made the turkey giblet and cognac gravy for Thanksgiving. Everyone loved the gravy. The cognac was perfect and I added the butter once I turned off the flame. Made it just perfect. We love onyo so I will definitely make this jam. I can hardly wait to make this.

    @Chef Jean-Pierre I absolutely love the way you teach! I teach a technical skill every day to students. The way you regularly reinforce techniques is extremely important and helps the learner remember the lesson! The skill I teach is drastically different from cooking but the ability to teach is an art my friend and you have it! Not that you need someone to validate your skill but I wanted to recognize your talent. Not only your skill in the culinary arts but your talent for teaching. Not everyone can teach but you can sir!     I'm surprised we haven't seen this earlier from Chef JP. It has his two favorite ingredients- bacon and of course onyo. And bacon is unique because it is the only food that comes before onyo, as chef has taught us in previous videos! Otherwise the water in the onyo prevents the bacon from getting crispy.

    👍😋👏👏👏. I thought my onion jam was good, but yours is the 💣. I freeze bacon grease, I freeze onions. I waste nothing. This is good on so many things. Believe me I love to try new things, I experiment a lot. I love onions. I not only freeze this, I keep a jar in the fridge, a pint size canning jar. It never last more than a week. In a pinch I've used a tablespoon of jack Daniels with Tennessee honey
    It's not over powering. I find just that amount was better than bourbon.the honey give it a smokey flavor.i tried it on a poached egg for brunch. I find one never know what taste good unless you give it a try. You don't have to add the jack with Honey. I had to try.😁. I love your recipes. I've added this to mines. You are indeed an Amazing Chef. For those who haven't tried one of your Amazing Recipes, they don't know what they are missing. I eat a lot of onions and garlic. a little butter never hurts, it only adds to whatever I cook. Please keep the recipes coming, I'm enjoying the videos.and learning new ways to cook things.     This on a cheese burger must be glorious, I even think it would be great on shrimp. Fine recipe, thank you Chef! And do save that extra bacon fat folks, fry up potatoes or veggies in it.
    You're not right under your hat if you throw away bacon fat.

    I've been using almost the exact same recipe for years, its my go to for steak and burger topping. its also super-yummie on plain old Crostini. :)
    using it as a body rub is 100% optional. lol

    Chef JP, absolutely amazing, I made this last night and put it on top of some Chicken scaloppini, the crunch from the bread crumbs and the amazing flavors of the jam was out of this world. I gave a friend a ghost pepper garlic burger I made for him with my homemade ghost pepper sauce and he topped it with the jam, he said it cleared his sinuses and made his tongue dance with amazing flavors. Thank you Chef, this is now going to be one of my main condiments I keep prepared.

    Hej Chef ! I've purchased many more Woll pans (Diamond serie, Saphire serie), woks etc. and I need to tell you that I am more and more amazed and at this point I love them. The coating on it is magical! In the beginning I though like meh they don't heat up fast, thick alumínium body, need much energy (which in comparison to clad stainless steel in deed they do), but by now I am using them daily, they heat up evenly (still measuring appr. 10 C degrees difference between bottom and sides or edges) and I am not even touching all my coated clad stainless steal pans anymore. Amazing products!
    Also I've invested into a 3ply Mauviel (M'Urban 3) saute pan, which I love too. That heats up so evenly on the whole body, that it even burned my wrist just by touching the edge shortly by whisking.
    Also ordered Falk copper saute pan, which I am very excited about how it performs and also a 22 cm demeyere saute pan, coz 22 cm is quite rare and I need one in that size. Also exited about once it arrives.

      I recently looked up Woll pans (because the big flat diamond pan looks like a Woll - is it one?) but they got pretty bad reviews on amazon which held me back from buying them. Perhaps unlucky customers, monday products or they are nit as good anymore as they used to be? I am from germany btw

      @@OivlisLHog I am not using them for too long, but Jean Pierre does and told in 1 of his videos by saying that he is using them for looong time, years.
      I've got them in diff sizes and shapes and are using them time to time, I take care of them though, try avoid using metal utensils in it, so until now I've not got even a single sratch on them. I love their pancake maker pan the most. The cubic shaped ones I like least, coz it does not heat up well in the corners (as the circle shape does), the bottom plate is imo just too small and circle shaped which lets the corners uncovered. But again, I am not using them for too long yet, so can't talk about long time durability .
      You should check the product after you receive it, because there might be quality control issues with anything. I've got one (not from Amazon though) that was beaten, had spots on it, missing the coating, so it went back straight away (delivery damage or delivered like that I dunno.)

    I'm not sure if this has ever been explained when Chef talks about his reduction pan. If you are looking to pick up a "reduction" pan just like Chef, you want to get a SAUCIER pan. It's basically a sauce pan with a rounded sides and thicker bottom for better heat transfer and easier to work with what is inside.

    "You don't drink?" Leans in "you should really try it". Hahaha! For all those that can't have alcohol, dont worry, your not going to have any effect (i.e. tipsy or drunk) from the small amount in the dish, most of it evaporates off or gets burned in a flambe. The flavor is all that's left behind.

      Alcohol vaporizes around 74 degrees farenheit. Correct.

    I made this recipe today. Wow! It’s so packed with deliciousness! I used some ingredients I had on hand such as non-maple bourbon and fig balsamic vinegar, but the flavors were still amazing! I had chicken breast, so I grilled it and topped it with aged cheddar and some of the jam and put it in a poppy seed Kaiser roll. It was so good! I can’t wait to top my hamburgers with it next. Thanks Chef JP for another terrific recipe!

    I can't wait to make this! I'm going try it on a hamburger with peanut butter and this jam and onion rings ( not on the side but as onion rings as a part of the burger )! I know that sounds crazy but it taste super delicious with black cherry or spice jam. Gonna see what this does!

    For the love of Bacon! I just made this excellent concoction and it is the absolute best. I had to wait a bit for the saucier to arrive and it was perfect. I used this on the smoked ribs freshly taken out of the smoker and the combination is stellar.
    Thank you Chef (and Jack) for another superb addition to a fantastic collection of recipes/videos.

    I was looking for your bacon bits... couldn't find them at first but man oh man I buy Stonewall Onion Jam... but Im so glad I can make it on my own now. Thank you thank you thank you! I'm so happy to have stumbled onto this!
    Also, I found the bacon bits it was under video shorts. I knew I was not losing it and seen you make it.

    When I read Onyo, Bacon Jam, I thought Chef JP has lost it now, but after watching the video it shows nothing is impossible and I will be making this for my burger topping to accompany the cheese slice. Make a big pot but put into small pots for freezing.
