If you used peat or sphagnum moss to start you veggies it would be moss if not thay it could be residue from the hydroton if you didn't rinse it well enough. If it truly does come off and your roots are white your fine if your using general hydroponics nutes they will turn your roots brown or any other organic nutrients will turn roots brown also but looks good. One of the leaves of lettuce did look a little deficient unless it was a leaf effected by the falling light
