    Ingredients:
    2 beef fillets (each 14 oz)
    Olive oil for frying
    1.1 lbs. wild mushroom mix, cleaned
    Leaves from 1 sprig of thyme
    1.1 lbs. puff pastry
    8 slices of Parma ham
    2 egg yolks, beaten with 1 tbsp water and a pinch of salt
    Sea salt and freshly ground black pepper
    For the Red Wine Sauce:
    2 tbsp olive oil
    7 oz beef trimmings
    4 large shallots, peeled and sliced
    12 black peppercorns
    1 bay leaf
    1 sprig of thyme
    A splash of red wine vinegar
    3 1/3 cups red wine
    3 1/3 cups beef stock
    Directions:
    00:00 Beef, fillet for Wellington, should be lean with fine sinews of fat and well-seasoned for flavor.
    00:36 Mushrooms must be dried in water to prevent a soggy Beef Wellington; sauté them without oil or butter.
    01:07 Assemble the Wellington with cling film for a tight hold of the Parma ham, mushrooms, and beef, then chill.
    01:24 Lay the chilled beef on puff pastry, apply egg wash for adhesion and tuck edges before further chilling.
    02:01 Slice beef Wellington into thick, one-inch portions to properly appreciate its flavors and textures.

    I made your receipe for Xmas Eve dinner 2023. I can only say thank you for sharing with us this delicous receipe. The only change I allowed myself to make was adding a chopped onion to the mushroom garlic and chestnut mix and cook them all together.
    It was amazing.

    I just ate this at his restaurant in Las Vegas and it is one of the best meals I ever had! (The mashed potatoes were a little cold, but it’s basically a garnish anyway)

    I have made wellingtons before but not this version. I am excited to try it for my Xmas party this year. One question - the printed recipe does not indicate how much English mustard to use. Can you tell me approximately how much? Also, I noticed the wellingtons are made smaller - 1 lb each. For 10 people would you recommend to continue making them a smaller size, or is okay to make one large one (8 lbs?)? Thank you.

    If I could offer the most gentle piece of constructive criticism from an editing standpoint: The fast camera cuts during the close zoom-ins made it difficult to see what was going on.

    Absolute gem, did it nicely, no soggy bottom this time, although next time. I need to roll it with cling film much tighter to get the tube shape, instead of a loaf of bread shape kind of look.

    Love your videos Gordon, it has helped myself and the wife gain more passion for cooking, which i have always loved, but because of your vids the wife now has a passion for cooking, only took 22 years, oh and by the way you own me a set of knives, she blunted all mine lol, Question i can't eat beef it makes me sick, not sure why, but is it possible to make a lamb wellington instead? please let me know :)

    I don't know how is the original recipe but I think I would use mushrooms cut into slices. I can't understand why to grind the mushrooms.. I am asking to learn, obiously.

    Ramsay's the only recipe I've seen for this that doesn't have pate in it. I know this recipe will obviously be amazing, but 100 bucks worth of beef to make it, should I gamble on not adding it?

    Where's the red wine sauce? Wellington is nailed, but I can't seem to get the wine sauce right.
