Love, love, LOVE this dish! I made it very frequently over the years and served it with roast beef.After developing diabetes, I cut way down on its use. Last year I lost 70 pounds and on Friday, I got the great news that I am no longer clinically diabetic and no longer have to take insulin. So these are back in the rotation, but not as often as they were. I'm going to make a big prime rib over the holidays, though, and you can be sure this dish will be right along side it. One thing I did was add some white pepper to them before serving. Be careful with it, though because white pepper is stronger than black.

This reminds of something my friend's grandfather called Hobo's Hominy. It was simply a drained can of hominy and a can of evaporated milk, cooked very slowly until the milk reduces to a creamy, almost cheesy consistency coating the hominy. These were supposed to have been invented during the Great Depression by hobos sneaking aboard boxcars to ride the rails, so I supposed salt and pepper depended on what they could scrounge. I've made it a time or two. It's filling and creamy and satisfying -- a real comfort food.
As soon as I heard the name of this dish in Spanish, I could not stop imaging Higgins artfully setting a table for himself with a beautiful steak, these potatoes and a perfectly decanted 1968 Ribera del Duero from Robin Masters' cellar. But when he goes to call Zeus and Apollo in for their supper, Magnum, TC, Rick and Jill St John burst in and devour the waiting feast, leaving Higgins flummoxed and seething in a proper British way.
Unfortunately due to family pressure I have to cook the full English style (full of meat) Christmas Dinner but I plan to add a twist by using several of your recipes as accompaniments. This is definitely going to be the Potato Dish of choice and I reckon will be a star of the meal!

As stated on the video, you can use any plant based milk, though the cooking times and texture of sauce might differ because of the fat content in regular milk:) much love
I'm surprised at the cornstarch being added to a hot pan rather than mixed first in the milk. Apparently works, but I've always dissolved it first in a little cold liquid.
That was my thought, too! It’s basically making a roux, except with cornstarch. I would be tempted to use regular flour instead, but maybe the cornstarch helps with the curdling that sometimes happens with regular white sauces.
@@MariaJette Cornstarch, to my knowledge, doesn't react well being applied directly to heat like flour. That's why you mix it with a cold liquid first. This surprised me.
rookie moves...pan too small, parsley chopped too big, used regular onions since i don't have the other, pan too hot when i put in the garlic and onion...and they still came out delicious! THANKS!

Starchy potatoes are used more to make mashed potatoes, I tend to use waxy kind as that is what used most in Spain :) much love!
