    Mam why it takes 30minutes to cook for one side ? In other youtube videos that i saw they grilled for like 5to 10minutes only. Iam in doubt to buy...😢

      Chicken Leg Quarts takes time to cook, cooking for just 10 minutes will end up with undercooked portion close to the bones. Also it depends on the size & the temperature at which it is cooked. We are not using traditional grill, cooking over stove top over medium flame will definitely take this much time to get the meat fully cooked through. Thanks!

    hello i tried to cook ur recipe on cast iron grill..whole masala got stuckto the pan and chicken wasn't cooked well..any tips pls

      Yes, it is quite tricky with cast iron but the heat will flow evenly. Cooking time varies with size of the chicken leg quarts, somewhere from 45 minutes to an hour. You need to cover and cook, also use the water droplets from steam built up to deglaze and cook. This way your chicken will be moist and not dry. Use extra oil if it's cast iron to avoid sticking.     Would the seasonings change if I wanted to apply barbecue sauce to the chicken?

      This seasoning is for Indian style, you can make it fusion style by basting it with barbecue sauce. The base will remain the same and once it is cooked through you just apply to sauce over and grill for a few minutes. Thanks🙂

    Hi , i have a doubt, when it comes to grill pan ,cast iron or non stick ,which works better for making grilled chicken (sliced ) ,fish ?

      The ideal one will be a seasoned cast iron / regular Indian iron pan. It all depends on what kind, thickness and marination is used for the fish. Very light mild seasoning will not stick and can be cooked over a grill pan, will have nice beautiful grill marks..especially thick flesh cuts which are easy to turnover. When it comes to Indian fishes with thick masala, fish needs to be shallow fried in oil. I mostly resort to a calphalon pan or iron tawa. The rule of thumb to fry fish is keep the pan hot and oil when placing the fish, that way the base gets cooked quickly and stays firm. It will be easy to turn when the base is firm. Only thick steak-like fish cuts are good for grilling and rest either shallow fry with oil in an iron pan or nonstick. Hope this helps 🙂🙏
