I have tried this recipe 3 times now to no success. I even borrowed the neighbor's cute kid to re-enact this video hoping it would give me success. My marshmallow batter turns out like a sticky blob that does not spread on my pan well at all. Just a hunk of batter sticking to the parchment paper. The only difference between this video and my re-enactment is the whisk attachment on my stand mixer, mine only has the beater attachment. Could it be that difference that is destroying my attempts?

Will regular dark raw honey work?
Yes - but the darker the honey the stronger the taste of honey, just FYI!

My gelatin never absorbed the way yours did. I used Great Lakes gelatin. What could I have done wrong?

Amanda, if it is great lakes you need the red canister, which is gelatin. The green is collagen and will not gel. Hope that helps!!

You said the gelatin makes it stretchy - do you think something like agar, or tapioca starch would work if you wanted to make these vegan?
