Hi Bold Bakers! Growing up, I never had corn syrup so I couldn't make a lot of recipes. With my corn syrup sub recipe, you can always have it on hand. Get the WRITTEN RECIPE: bit.ly/CornSyrupSub and I hope it comes in handy. :)
Gemma Stafford... Can't thank you enough! I sooo need this. I live in Italy but from the US. NO Corn syrup here. WHAT they do have is glucose syrup it's like 8€ for a very tiny amount. Even pancake syrup is ridiculous here...
I just love how you make substitutes for people that might not be able to have other ingredients or don't want to have other ingredients! I adore your channel! ☺
Thank you! I'm allergic to corn, but cream of tartar also has corn in it, so I had to make corn free cream of tartar for myself. Corn allergies are growing in the USA do to the amounts of genetically modified crops being sprayed with Roundup. It's just scary what we don't know about it yet, but thank you for the corn syrup substitute recipe! 👍🏼
Really according to me... This is the best video you ever uploaded as finding corn syrup is so rare in my country..... Thank you Gemma! You're so great.
My wife has severe allergies and a restricted diet, and corn syrup is on her do-not-eat list. Most of my recipes don’t call for corn syrup (it’s not like I’m baking pecan pies ever!) but the one recipe that I want to be able to use for my wife is 7-minute frosting, which does call for a little bit of corn syrup. This substitute is exactly what I needed, so thank you for sharing!
Love this I'm an American just moved to Tunisia and I love how you show us how to make substitutes for ingredients because her we don't have things like corn syrup brown sugar cake flour ect this really helps me out thanks so much 😍😁😋🤗
This is terrific thanks. Can't find corn syrup in the UK unless you have an American food shop nearby. Even then it is too expensive. Now I can make recipes that call for this ingredient. Happy bunny.
Thank you so much for this recipe. There have been so many instances where I have wanted to make a recipe but couldn't have done so because it included corn syrup and it's not available easily in markets near me. Now I can make those. Thank you so much. 😊😊
Honestly, since I discovered golden syrup, I try to use it instead of corn syrup as much as possible. I truly fell in love with it, so gooood! It almost reminds me of maple taffy with the treacly taste and thickness... 😋
I wish there was a substitute for Lyles' Golden syrup. I found it once in a store in South Carolina and fell in love with it. Now I live in southern Utah and can't find it!
I'd love for that as well. Had it one time here in FL when a store randomly got it in and next year I wanted it for pecan pie and the store no longer carried it. :(
There are a couple of videos already on here to make golden syrup. I tried to do one a few weeks ago but obviously didn't do it properly as it has begun to crystalise. I hope Gemma can do a version of it & also how to rescue one that has gone wrong! (Please?)
I just made the corn syrup substitute following your directions, and it was on point! I used the candy thermometer way, and I reached the right temp and consistency before fifteen minutes was up. After cooling the pot, I poured it into these tiny sterilized mason jars and plan to store in the fridge. So excited to use it! :)

So the cream of tartar stops the corn syrup from crystalizing, so it is quite an important ingredient. If you leave it out, the syrup will harden. But you can leave it out if you do not have it. Just make sure you use the corn syrup fresh. Happy baking! Gemma 😊
Hi,love how i can substitute if I don’t have an ingredient at hand, tanx a bunch for sharing. Do you by any chance have a recipe for baking turkey? Want to try cooking one for myself, would appreciate!! Happy Thanksgiving!!! 🙏🏻
Hi Gemma 😊 I made it in September and have it in the fridge. It is almost good. I used mine to make Marshmellow Fluff. So yummy. Yours is amazing. Bye dear Gemma.😊😚
I love the Bold Baking Basics! It's so difficult to get certain ingredients in India, especially in my city, so these videos are really helpful! Unfortunately, one of them is cream of tartar, and online shopping takes a lot of time (about a week) to reach my place. I was wondering that if it's only an acid, shouldn't vinegar or lemon juice work too? A lot of corn syrup substitute recipes online call for it. Hope you have a good day!
Unfortunately, there is no substitute for cream of tartar. You could omit it from the recipe, but do note that the syrup would crystalize. It is the cream of tartar that prevents this from happening. But the corn syrup sub should work well fresh :)
Thanks for another great video Gemma! I was wondering, have you ever made cookies with avocado instead of butter? I've heard it's a good replacement but haven't tried it out myself. I'm sure the taste wouldn't be as good though!
Hi Gemma....my corn syrup substitute turned golden by the time it cooled...I guess it has caramelized....can I still use it for making fondant after microwaving it??
Hello Gemma, thank you for your great baking tips, substitutes and recipes! 😊 Is there a way of making a corn syrup substitute using sweeteners? Thank you in advance 😁

Do you have any tips for increasing cook time if I increase the amount used in the recipe? like if I wanted to make a double batch all at once, do I need to increase the cook time as well?
If you will double the recipe, you will increase the cook time. If you are using a candy thermometer, you'd be working towards hitting that 230F mark. But if you aren't, just keep a close eye on the syrup and note the changes it goes through.
Can this substitute be used in candy recipes? I know some substitutes for corn syrup can’t... I have a fantastic fudge recipe that uses corn syrup, but will be moving to Indonesia soon where I’m not sure it’s available.
